My instant pot cheesy chicken and potato soup is the best thing you can make on a chilly day. It will warm the body and soul at the same time. It’s both hearty and delicious, and easy to make for when your kids are home because of a “snow day”.

Yes. I’m experiencing that right now, so I knew had to make the kids something yummy and not so time consuming on part of cooking. If you don’t have an Instant Pot, you can still use this recipe in any type of pressure cooker.

My Instant Pot cheesy chicken and potato soup is loaded with chunks of yummy chicken and potatoes. But I use a super yummy ingredient: a dry packet of ranch dressing. It helps to add a special layer of flavor that just knocks it out of the park. I used to make this in my slow cooker, but it just turns out so amazing (and faster) in my Instant Pot!

Here’s the recipe, and I hope you enjoy it as much as my family does. Please Note: DO NOT ADD SALT! You will get more than enough flavor from the ranch seasoning packet. This is why I use a low sodium chicken broth for it.

  1. Well, I made this today….and as I usually do, made a change or two! Very good. I sautéed 1/4 onion and about a 1/2 C celery in avocado oil. Added chunked organic boneless thighs from TJ to precook a bit. Used Yukon gold small potatoes, a couple of carrots, sour cream (did not have any cream cheese), made own spice mix of onion salt, chili lime, salt, pepper and 21 seasoning from TJ’s. Sprinkled already shredded cheese (about 2 C rather than 4). And at last minute threw in some frozen peas for color! I smooshed the potatoes a bit to thicken. It turned out great. I will try to follow recipe next time!!!! I was in the mood for a cheesy potato soup so found yours.
