Yes! You can make these chicken taquitos with canned chicken. You’ll want at least a few good-sized cans. Drain it very well and use a fork to break up the chunks.

What Chicken Can I Use to Make Chicken Taquitos?

You can use any chicken you want! Of course, this recipe helps you make juicy and flavorful chicken in the Instant Pot, but you can grab a rotisserie chicken, pre-cooked chicken from the grocery store, use leftovers, or bake some chicken in the oven – any chicken will do as long as you heat it up with seasonings as directed in the recipe!

How Do I Store Instant Pot Chicken Taquitos?

Leftover chicken taquitos can be stored in an airtight container in the fridge for up to 4 days.

Can I Freeze Instant Pot Chicken Taquitos?

These chicken taquitos can be frozen once cooked for a future meal. Once cool, place them on a baking sheet to freeze them individually, then place them in a freezer bag or container. This ensures they don’t stick as they freeze. They can be kept in the freezer for up to 3 months. 

Reheat from frozen in an air fryer or oven.

Tips for Making Instant Pot Chicken Taquitos

  • The pot in the Instant Pot can get very hot, so wear oven mitts before handling. 
  • Cooked chicken has an internal temperature of 165 degrees F. Use a meat thermometer to check the temperature of the chicken, or cut it open in the thickest part and make sure it appears fully white and cooked through.
  • The Recipe calls to be pan fried in a oil, but you can cut the oil and go straight to the air fryer with them! Preheat your air fryer to 375°F, and then cook them (5-6 at a time, depending on size of air fryer) for 8-10 minutes.

What’s the Easiest Way to Shred Chicken?

I have shredded a lot of chicken over the years. I learned this trick a few years ago and I will NEVER use two forks to shred meat again. Just remove your chicken from the instant pot and use a knife or a fork to break each piece of chicken up until 2 or 3 large pieces. Place the pieces in a mixing bowl and use a hand mixer on medium speed to shred the chicken. It is like a miracle how well this works!

Substitutions

Tortillas: If you can’t find corn tortillas, you can use flour ones.
Sour Cream: You can use greek yogurt for a lower-calorie option. You can also use creme fraiche or cotija cheese. Both are delicious!
Chicken: Instead of chicken, you can use pulled fork in this recipe. You can also use seasoned ground beef.

Instant Pot Chicken Taquitos

Instant Pot Chicken Taquitos

Made easy with an Instant Pot, these Instant Pot chicken taquitos are crispy, flavorful, and addicting!

Ingredients

  • 1 package of 20 corn tortillas
  • 2 pounds chicken breast
  • 1 cup of sour cream
  • 1 cup of salsa
  • 2 tablespoons taco seasoning
  • 2 cups of water, divided

Garnish:

  • Cilantro
  • Sour cream
  • Salsa
  • Shredded Cheese

Instructions

  1. Place the chicken in the Instant Pot on the trivet in the Instant Pot. Sprinkle the taco seasoning evenly over the chicken breasts. Pour 1 cup of water into the bottom of the Instant Pot. Place the lid on the Instant Pot and close the valve. Set the Instant Pot to high pressure for 10 minutes.
  2. After the 10 minutes are done, manually release by opening the valve. Open the Instant Pot lid after all the pressure has been released.
  3. Remove each piece of chicken, and shred. After shredding, put it in a large bowl along with the sour cream and salsa. Mix well.
  4. Pour out the water from the Instant Pot, and wipe the pot, as well as the trivet. Once cleaned, add 1 cup of water and turn the Instant Pot on steam mode. When the water is bubbling, place a tortilla on the trivet.
  5. Steam one side for about 1 minute, flip, and steam the other side for about 1 minute.
  6. After the tortilla has steamed, place about 2 tablespoons of the chicken mixture in the tortilla across the middle. Roll, then set aside. Continue with the next taquito.
  7. Pour oil into a frying pan about halfway. Set your stove to medium heat. Once the oil is hot, place the taquito fold-side down until golden brown. Flip to fry the opposite side until golden brown. Continue until all are cooked. Of course, you can also cook these in the air fryer or oven! Simply preheat your air fryer to 375°F. Place taquitos into air fryer and cook for approximately 8-10 minutes.
  8. Serve with your favorite sides, such as cilantro, shredded cheese, salsa, and sour cream! Enjoy!

Notes

Ensure the oil is hot before putting in a taquito; otherwise, the tortilla will absorb the oil and become soggy.

After frying, place the taquitos on a plate lined with a paper towel to drain off the excess oil.
