The Holiday times is always hectic for everyone, most especially when you’re trying to cook & bake a 1,001 different items at the same time. While cooking for Holiday gatherings, it dawns on you that you are in charge of making breakfast for everyone. The stress builds up, and then you’re stuck wondering exactly what culinary creation you’re going to make to keep everyone happy. For this recipe, I’m using the Johnsonville® Vermont Maple Syrup Flavored Sausage Patties. I love hint of sweetness in these patties! FYI, their line of breakfast sausages are available in the form of links. Whether you like patties or links, Johnsonville® has got your back! What’s better? How about no fillers? Just premium cuts of pork. What could be even better than that? They’re available nationwide! I had 16 people over for Thanksgiving, and had about 10 hungry mouths to feed in the morning. With all of that clean up that I still had to do in the kitchen, I knew I needed to make some fast, delicious, and satisfying. So, I decided to make some breakfast bites for everyone! This recipe is completely easy to do, and you can get it done in under 15 minutes! How’s THAT for a fast and delicious breakfast?

Here’s the recipe, and I hope you enjoy it!

Quick and Easy Breakfast Bites

Ingredients

  • 2 Cans of biscuit dough (regular size)
  • 2 Packages of Johnsonville® Vermont Maple Syrup Flavored Sausage Patties
  • 6 Eggs
  • 1 Cup of shredded Cheddar Jack cheese

Instructions

  1. Pre-heat oven to 375.
  2. To prep, take each sausage patty and pinch in half. Take each half and flatten them out to round discs, approximately the size of a 50 cent piece.
  3. Cook your Sausage patties on a medium heat in a large pan. Because they are thin, they should only take a couple of minutes to cook on each side.
  4. While your sausage patties are cooking, open your biscuit doughs. One by one, add them to a muffin tin. You want to press the dough into the pan to make a tart like shape. Don't be afraid to use pressure and spread them out in the muffin tray.
  5. When you're sausage patties are done cooking, place a sausage patty on top of each biscuit tart that you made in the muffin tray. Press down slight so it will be at the bottom.
  6. Place muffin tray in oven for approximately 7 minutes or until golden brown.
  7. While your biscuit tarts are cooking, let's make some cheesy scrambled eggs!
  8. in a medium non-stick pan on medium heat (use a little non-stick spray), add your eggs. I use a wooden spoon to scramble the eggs along the way. I like them that way. However, you can scramble your eggs in a bowl before cooking.
  9. Once eggs are 90% done, add in your cheese and stir until cheese has melted through thoroughly.
  10. Remove from heat and let stand for 1 minute.
  11. Pull your biscuit tarts out of the oven and remove each one form a tray.
  12. Place a teaspoon full of cheesy egg mixture on top of your sausage tart, and you're good to go!
  13. If you want add a little flair, serve with a side of maple syrup.
  14. You can serve the extra patties on the side as a bonus!
