What Exactly is Southwest Chicken Soup?
Southwest Chicken Soup gets its name from the spicy kind of food that you’ll typically come across in most Southwest cuisine. Common ingredients in Southwest Chicken Soup, despite any recipe variations, include diced jalapenos and chili powder.
While this recipe doesn’t specify what kind of diced tomatoes to use, you could certainly use spicy Ro-tel tomatoes.
For anyone who loves food with some kick of heat, this Southwest Chicken Soup shouldn’t be overlooked!
How Should I Store this Instant Pot Southwest Chicken Soup Recipe?
Instant Pot Southwest Chicken Soup can be stored, much like other chicken soups, for up to 4 days in the refrigerator in an airtight container. Make sure that your soup is completely cool before storing it.
If you want to extend the shelf life of your chicken soup, freeze it for up to 3 months in a Ziploc bag or in an airtight container. Thaw overnight in the refrigerator and heat up on the stovetop on a medium heat.
Can I make this Southwest Chicken Soup in a Slow Cooker?
Absolutely! Add all the ingredients to your slow cooker and cook either on the LOW setting for about 6 hours or on HIGH for 3 hours. You can then pull out the chicken and shred it, and then return to your slow cooker.
What Can I Garnish on Top of the Soup?
Possible toppings you could choose for your chicken soup really depends on your own personal preferences as well as your dietary goals. Nevertheless, here are some delicious topping ideas to consider when serving this soup:
- Sliced avocado;
- Grated cheese;
- A dollop of sour cream or Greek yogurt;
- Fresh chopped cilantro or green onions;
- Corn chips.
Tips for Making My Southwest Chicken Soup in Your Instant Pot
- I used cubed chicken breast for this Southwest soup but you could also use shredded chicken (especially if you have any stored away and ready for use).
- This chicken soup is hearty enough to enjoy just as it is. You can also serve it with homemade dinner rolls or flaky savory biscuits, which are great options for soaking up any remaining soup or ingredients left behind in your bowl!
- This Southwest Chicken Soup is spicy with a slight kick of heat. Feel free to increase the heat by adding in more chili powder or leave it out if you don’t enjoy any heat at all – it’ll still be an extremely delicious chicken soup!
- Feel free to add in more vegetables to bulk up your soup such as beans and shredded hash browns if this fits into your dietary requirements.
