Instant Pot Southwest Chicken Soup

This southwest chicken soup made in the Instant Pot is packed full of yummy flavors, jalapeños, tomatoes, and more!

Additional Time 15 minutes
Total Time 38 minutes

Ingredients

  • 2 tsp olive oil
  • 1lb boneless skinless chicken breast, cubed
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 onion diced
  • 1 green pepper diced
  • 1 jalapeno seeded and diced
  • 2 cloves minced garlic
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup frozen corn
  • 1 tbsp lime juice

Instructions

  1. Set Instant Pot to Saute, add in olive oil and chicken breast, stirring until chicken is slightly browned. Press stop to turn off Saute.
  2. Add in salt, pepper, onion, green pepper, jalapeno, garlic, chili powder, cumin, chicken broth, tomatoes, corn, and lime juice.
  3. Lock lid into place and set vent to sealing.
  4. Press Manual or Soup button and set to 11 minutes.
  5. When cooking time is finished, quick release the vent and remove lid.
  6. Spoon into bowls and garnish as you wish within your MyWW points.
