Asparagus Puff Pastry Bundles

Asparagus Puff Pastry Bundles are an elegant appetizer or plate filler for parties, holidays, and other special occasions. The flaky pastry folds around buttery seasoned asparagus stalks, sliced prosciutto, and melted cubes of brie!

If you’re someone who struggles to enjoy their greens or you have some picky eaters in the family, folding asparagus in flaky, buttery pastry together with other incredibly delicious ingredients is an instant game-changer!

The sweet and salty flavors of sliced prosciutto with spicy mustard and gooey brie meld together like a match made in heaven. I’ve also added a sprinkle of Everything But the Bagel Seasoning for extra crunch and elegance.

INGREDIENT NOTES

  • Puff pastry – Use any brand of puff pastry sheet for these asparagus bundles. Allow your frozen sheet of puff pastry to thaw until it’s pliable, but not too warm that it becomes difficult to work with.
  • Brie – Cut a wheel of Brie into 8 lengthwise portions. Make sure they are not wedges. Another cheese, such as grated Gruyere, could be used instead.
  • Asparagus – You’ll need 32 stalks (4 per asparagus bundle). This is roughly 1 – 2 bunches of asparagus.
  • Prosciutto – 1 slice of prosciutto per bundle. Parma ham or any other quality sliced ham can be used instead.
  • Dijon mustard – I love this mustard for its sharp and tangy flavor which seems to pair beautifully with the rest of the ingredients. You could use another type of spicy mustard or even honey mustard, if you prefer.
  • Honey – Always use good quality honey. It adds a delicious sweetened note.
  • Butter – Feel free to use salted or unsalted butter. Unsalted is great if you want to reduce sodium.
  • Olive oil – This is added to the melted butter mixture for coating the asparagus.
  • Egg – The beaten egg is used to seal the folded edges of the puff pastry and wash the top of each assembled bundle for that irresistible golden hue.
  • Salt and Pepper – Used to season the butter mixture
  • Everything but the Bagel Seasoning – Sprinkled over the assembled asparagus bundles while the egg wash is still tacky so that it sticks.

EVERYTHING YOU NEED TO KNOW ABOUT PUFF PASTRY

WHAT IT IS

If you don’t know what puff pastry is, it’s essentially a type of dough made from flour, water, salt, and butter. It becomes light and super flaky when baked and can be enjoyed as a savory or sweet treat depending on what you add to it.

Preparing puff pastry dough can feel technical to those who are new to baking. Luckily, there’s an endless supply of the stuff in the frozen section of most grocery stores. These rolls of packaged puff pastry make it extremely easy and convenient for making these asparagus brie bundles as well as the likes of other delicious tarts and appetizers!

HOW TO USE YOUR PUFF PASTRY

The key to handling puff pastry for this appetizer and in general for other recipes is to never allow it to get too warm. It’s important to allow the frozen sheets of puff pastry to thaw enough so that it can become pliable and molded or folded the way you need, but as soon as it heats up too much, it becomes tacky and will stick to your work surface and your hands. Puff pastry that is too warm is also at risk of not puffing up well in the oven.

Let your frozen puff pastry warm at room temperature for about 30-40 minutes. Hot and humid climates or environments will require less thawing time.

PUFF PASTRY ALTERNATIVES

Crescent roll dough can be used to make these asparagus bundles in a pinch. While many think of phyllo pastry as being similar to puff pastry, they actually have some key differences with phyllo being much drier and flaky. I don’t recommend using phyllo pastry as it will result in a different texture than what this recipe is going for.

STORAGE INSTRUCTIONS

  • Refrigeration: Leftover asparagus puff pastry bundles are best served immediately. That said, you can store them in an airtight container in the fridge for 2-3 days. Keep in mind that the puff pastry will start to lose that crispy, flaky texture.
  • Reheat: Warm these asparagus bundles in the air fryer or oven, but be careful that you don’t burn the puff pastry.
  • Freezer: Freeze baked asparagus brie puff pastry bundles, once completely cool, for up to 2 weeks. Thaw them in the fridge to reheat.

Asparagus Puff Pastry Bundles

Asparagus Puff Pastry Bundles with flaky puff pastry, gooey brie, salty prosciutto, tender asparagus, and spicy Dijon mustard are elegant appetizers that you can enjoy at parties and holidays!

Ingredients

  • 1 Puff Pastry Sheet
  • 1 Wheel of Brie (Cut 8 lengthwise portions, not wedges)
  • 1 - 2 Bunches of Asparagus (32 stalks)
  • 8 Slices Prosciutto
  • 3 Tablespoons of Dijon Mustard
  • ยผ Cup of Honey
  • 2 Tablespoons Butter
  • 3 Tablespoons Olive Oil
  • 1 Egg
  • Salt and Pepper to season
  • Everything but the Bagel Seasoning

Instructions

  1. Remove puff pastry. Preheat the oven to 375°F.
  2. Wash and trim the asparagus. 
  3. Melt butter in the microwave. In a bowl, mix asparagus, butter, olive oil, salt and pepper until asparagus is well coated. 
  4. Crack open the egg, and lightly beat with a fork.
  5. Roll out puff pastry and cut into 8 equal pieces. 
  6. To each square, add a slice of brie, then a piece of prosciutto, then 4 stalks of asparagus. Fold the first corner over the asparagus bundle then brush the opposite corner with an egg wash. Fold that over the first corner and press to close. Repeat the process until all are done. Please each one on a piece of parchment paper on a baking tray. 
  7. Egg wash the top of each bundle, and then sprinkle with Everything but the Bagel seasoning. 
  8. Bake for 20-25 minutes, or until puffy and golden brown colored.  Allow to cool for a few minutes and serve.

FREQUENTLY ASKED QUESTIONS

CAN I USE FROZEN ASPARAGUS FOR THIS APPETIZER?

I don’t recommend it. Use fresh asparagus for the best flavor and texture. Frozen thawed asparagus will likely still excrete too much moisture when baked or air fried and affect the puff pastry.

CAN I MAKE THESE ASPARAGUS BRIE PUFF PASTRY BUNDLES IN ADVANCE?

It’s possible to make these a day in advance, but they taste the best when served immediately after baking.

HOW SHOULD I SERVE THESE ASPARAGUS BUNDLES?

They’re perfect as an appetizer or to enjoy as a light meal alongside a fresh salad, scrambled eggs, or a quiche. These are also great for those special occasions or holidays, such as Mother’s day or Easter.
