When I was a teenager, I remember one of my best friend’s mom cooking in her pressure cooker. She would be a sweaty mess, have a sweat towel wrapped around her neck, and she would be loving every single minute. I was amazed with all of the food that she would prepare in it, and then turn around and can most of it. Of course, many of the models of the Instant Pot can’t do any type of canning….with exceptions of the newest model that’s out!

While our mothers and grandmothers were comfortable using a stovetop pressure cooker; however, most people were too intimidated by the hissing and the potential of having it blow up their whole kitchen or home. Because of the very fear of this happening, pressure cooking has fallen out of grace for a long time, until the arrival of the Instant Pot – a self-contained, electrical pressure cooker with plenty of built in safety features.

The Instant Pot is a self-contained unit that safely sits on your counter top, yet it only takes up about as much space as a rice cooker or a smaller version of a slow cooker. The Instant Pot is a smart pressure cooker that’s controlled through a digital interface. You tell it how long you want to cook your meal under pressure, set the timer and you’re good to go. It automatically brings up and holds the pressure at a safe level and will not allow you to open the pot while it’s pressurized. That’s a great safety feature that we can all fall in love with!

I’m in love with the a new twist on an old cooking process that’s bringing fresh life into Instant Pot recipes that any home cook or professional chef can make. The Instant Pot doesn’t care what type of cook you are, it just does what you tell it do!

The Instant Pot isn’t just some kind of self-contained pressure cooker. You can also boil, sear, sauté, poach, and so many other things with it. I love cooking in my Instant Pot as often as I can, and I actually use it like a wooden spoon in my kitchen. I use it to help me cook and prepare food that I would like to finish in the oven, stove top, or grill.
