Ingredients
- 1 tablespoon olive oil
- 1 pound ground Turkey, 99% Fat Free
- 1/2 cup sweet onion, diced
- 1 – 15 oz can black beans, drained and rinsed
- 1 – 15 oz can corn, drained
- 1 – 15 oz can diced tomatoes
- 1 cup chunky style salsa
- 1 - 4.5 oz can chopped green chilies, drained
- 1 tablespoon taco seasoning mix
- 1 – 10 oz can mild red enchilada sauce
- 1 – 16 oz package frozen tater tots
- 2 cups shredded cheddar – jack cheese
Instructions
- Heat olive oil in a large skillet over medium high heat. Add onions and sauté for 3-4 minutes or until soft. Then add in ground turkey. Cook until no longer pink. Once done, remove from heat and set to the side.
- In a large bowl, add black beans, corn, salsa, green chilies, tomatoes, taco seasoning, enchilada sauce, and cooked ground turkey. Stir to mix ingredients well.
- Spread half of the tater tots onto the bottom of the slow cooker; top with ground turkey mixture. Layer 1 cup of cheese on top, and finish with remaining tater tots. Cover and cook on Low heat for 5-6 hours or High heat for 3-4 hour. Add cheese during the last 30 minutes of cooking time.
