Ingredients
1tablespoonolive oil
1poundground Turkey99% Fat Free
1/2cupsweet oniondiced
1– 15 oz can black beansdrained and rinsed
1– 15 oz can corndrained
1– 15 oz can diced tomatoes
1cupchunky style salsa
1 - 4.5ozcan chopped green chiliesdrained
1tablespoontaco seasoning mix
1– 10 oz can mild red enchilada sauce
1– 16 oz package frozen tater tots
2cupsshredded cheddar – jack cheese
Instructions
Heat olive oil in a large skillet over medium high heat. Add onions and sauté for 3-4 minutes or until soft. Then add in ground turkey. Cook until no longer pink. Once done, remove from heat and set to the side.
In a large bowl, add black beans, corn, salsa, green chilies, tomatoes, taco seasoning, enchilada sauce, and cooked ground turkey. Stir to mix ingredients well.
Spread half of the tater tots onto the bottom of the slow cooker; top with ground turkey mixture. Layer 1 cup of cheese on top, and finish with remaining tater tots. Cover and cook on Low heat for 5-6 hours or High heat for 3-4 hour. Add cheese during the last 30 minutes of cooking time.
