This Air Fryer Zucchini Casserole is loaded with cheesy flavor and cooks quickly in the air fryer. The best part of this side dish recipe is that it takes only 18 minutes to cook. It makes for the perfect side dish for a family dinner.
One of my favorite things about the summer season is fresh vegetables. I love going to a roadside produce stand and buying farm fresh produce directly from the grower. Zucchini is one of my purchases every single time we stop at a roadside stand. I love how flexible zucchini is, there are so many different recipes that you can make with zucchini. Yes, you can certainly use summer squash instead of zucchini. You could even use a mix of summer squash and zucchini. I personally prefer the texture of just zucchini, but I’ve made this dish with a mix of summer squash and zucchini and it comes out just as delicious as with just zucchini. No matter which way you make this casserole your family will ask you to make it again and again.
How do I store Air Fryer Zucchini Casserole
Store your leftover zucchini casserole in the fridge for up to five days. In order to protect your casserole, you must make sure that your casserole is tightly covered while it is being stored. To reheat your leftover casserole you can microwave on a microwave safe plate for one to two minutes until warm all the way through.
You can also reheat your leftover air fryer zucchini casserole in the air fryer. To reheat leftovers in the air fryer, place the leftover casserole into an oven safe dish and place in your air fryer at 350 degrees for4 to 5 minutes or until your leftover casserole is warm all the way through the center.

Air Fryer Zucchini Casserole Recipe
- 3 Zucchinis
- 1 cup parmesan cheese
- ¼ cup heavy cream
- 2 tbsp butter
- 1 tbsp garlic, minced
- Salt to taste
How To Make
Slice zucchinis into rounds
In a small casserole dish that fits into your air fryer, add a layer of zucchinis overlapping in rows.
Sprinkle â…“ of the parmesan cheese on top of the first layer.
Then, add another layer of zucchinis on top of the cheese.
Add another sprinkle of parmesan cheese on the second layer.
Next, add the 3rd and final layer of zucchini slices.
Sprinkle with the remainder of the cheese on top of the third layer.
In a saucepan on medium heat, add the heavy cream, butter, and diced garlic.
Mix ingredients together until the butter is melted and the sauce starts bubbling.
Take off the heat and pour over the casserole.
Then, add the casserole into the air fryer for 18 minutes at 375 degrees F.
