Tips for Making Easy Double Chocolate Cookies

  • To keep your batter from having lumps that are difficult to remove, set them out long enough that everything is at room temperature before mixing.
  • Use a portion scoop to ensure your cookies will all be the same size and help them bake consistently.
  • For a chewier cookie, take them out just before you think they are done. Remember that cookies will continue to bake slightly once you take them out of the oven.

  • Don’t rush it when mixing the sugar and butter together. This process, called creaming, incorporates tiny air bubbles into the dough which help the cookies to rise.
  • Accurately measure flour by spooning it into your measuring cup and levelling it off with the back of a knife. Too much or too little flour changes the consistency of your cookies.
  • Parchment paper is your best friend when baking cookies. It not only helps the cookies to bake more evenly because it creates a barrier between the baking sheet and the dough, it also helps keep the cookies from spreading too much and makes it easier to remove them from the baking sheet. Plus, less clean up!

  • Sugar – Replace granulated sugar with brown sugar to give a richer, nuttier flavor. Your cookies will be softer and will spread more. 1 cup of white sugar can be substituted equally for 1 cup of packed brown sugar.
  • Margarine can be substituted equally for butter.
  • Other types of chips or nuts are easy substitutions for this recipe. Be creative.
