Can I Freeze Double Chocolate Cookies?

Bakes cookies keep well in the freezer for eight to twelve months if kept in an airtight container or Ziploc bag.

To freeze unbaked dough, portion it into balls and freeze them on a baking sheet before placing them in a container for long-term storage. Simply set them out while preheating your oven to bake them up fresh as desired. They may require an extra couple of minutes to bake if the dough is partially frozen when it goes in the oven.

Notes

  • Don’t rush it when mixing the sugar and butter together. This process, called creaming, incorporates tiny air bubbles into the dough which help the cookies to rise. 
  • Accurately measure flour by spooning it into your measuring cup and levelling it off with the back of a knife. Too much or too little flour changes the consistency of your cookies.
  • Parchment paper is your best friend when baking cookies. It not only helps the cookies to bake more evenly because it creates a barrier between the baking sheet and the dough, it also helps keep the cookies from spreading too much and makes it easier to remove them from the baking sheet. Plus, less clean up!

Substitutions

  • Sugar – Replace granulated sugar with brown sugar to give a richer, nuttier flavor. Your cookies will be softer and will spread more. 1 cup of white sugar can be substituted equally for 1 cup of packed brown sugar.
  • Margarine can be substituted equally for butter.
  • Other types of chips or nuts are easy substitutions for this recipe. Be creative.

Easy Double Chocolate Cookies

The yummiest, richest chocolate cookie batter stuffed with even more chocolate - these are a chocoholics dream! With this easy recipe, you'll have double chocolate cookies warm from the oven in 30 minutes.

Cook Time 12 minutes
Additional Time 5 minutes
Total Time 5 minutes

Ingredients

  • 1 cup (250g) butter, softened
  • 1 3/4 cups (350g) of sugar
  • 2 large eggs
  • 2 3/4 cups (350g) wheat flour
  • 3/4 cups (100g) of cocoa powder
  • 1 tsp baking powder
  • 1 1/4 cups (200g) of chocolate chips or chopped pieces of chocolate

Instructions

  1. Beat the butter and sugar together with an optional pinch of sea salt in a bowl. Then beat in the eggs one at a time.
  2. Sift over the flour and cocoa powder and beat into the butter mix, then fold through the chocolate chips.
  3. To bake, heat oven to 375°F (190°C). If the mix is cold from the fridge, you can roll it into 40g balls before baking.
  4. Bake for 12-15 mins until spread out and crusty around the outside.
