Peanut Butter Pumpkin Cookies Recipe

I simply adore easy to make and delicious cookies, and my Peanut Butter Pumpkin Cookies are right at the top of the list of being easy to make…and smack your mouth delicious! I actually used a modified version of my other Peanut Butter Cookie Recipe. I was a little concerned that I was going to have a few issues at first, but when it was all said and done….DELICIOUS! The aroma of the peanut butter and pumpkin filled my house. My neighbors came over as they knew I was making something good! Though, they know I have an open door policy when the baking starts in the kitchen. Who am I deprive them? Besides, it’s not like I want to get fat eating them all by myself!

Now, you might have  a few qualms about if peanut butter and pumpkin go together. Initially, I did too…until I had my first cookie. Uhm…yeah…I should have changed that to state, “Until I had my first 6 cookies!” The recipe can easily adapt into a double batch, and is definitely perfect for your holiday baking time!

Peanut Butter Pumpkin Cookies Recipe

Ingredients

  • 1 1/4 Cups of Sugar
  • 1 Cup Peanut Butter
  • 1 Egg
  • 1/4 Cup of Pumpkin Puree
  • 1/2 Teaspoon Pumpkin Spice

Instructions

  • Preheat oven to 375.
  • Place all ingredients in a bowl and mix thoroughly. You will notice how it becomes a very thick dough...and it's slightly tacky to touch.
  • Pinch of pieces of dough, and roll into little ball shapes.
  • With a fork, make a criss cross pattern.
  • Bake for 10 - 12 minutes
