Instant Pot Beef and Rice

This Instant Pot beef and rice brings together bite-size beef, long-grain brown rice, and a ginger-soy marinade with honey, lime, and sesame oil. The rice cooks in the same pot as the beef, soaking up the cooking liquid for a hearty dinner with a little sweetness and a kick of red pepper.

I love a dinner that doesn’t leave me washing a skillet, a rice pot, and half the kitchen afterward. This one keeps the cooking in one pot, but give yourself time for the marinade before you start. You can get the beef ready the night before, then move on to browning and pressure cooking when it’s time to make dinner.

About This Recipe

The beef marinates in the refrigerator for at least 30 minutes (overnight gives you more flavor), then gets browned right in the Instant Pot. The marinade is discarded, the rice goes in, and everything cooks on high pressure for 22 minutes with a 10-minute natural release. Plan on about 1 hour 25 minutes start to finish, including marinating. Youโ€™ll need a 6-quart Instant Pot.

Recipe Snapshot

Prep Time: 5 minutes, plus at least 30 minutes to marinate

Cook Time: About 26 minutes, including browning and 22 minutes at high pressure

Total Time: About 70 minutes minimum, plus pressure buildup; longer if marinating overnight or browning in batches

Servings: 4

Difficulty: Easy

Perfect For: Make-ahead dinner prep and hearty one-pot meals

Main Ingredients: Stew beef, long-grain brown rice, soy sauce, sesame oil, honey, lime juice, and fresh ginger

Why This Recipe Works

Browning the marinated beef leaves flavorful bits on the bottom of the pot. When you scrape those bits into the broth, they become part of the liquid the brown rice absorbs. The result is rice that tastes like part of the meal, rather than a plain side added at the end.

The timing here is written for long-grain brown rice. Its longer cooking time makes it a better fit for this recipe than quick-cooking white rice. The 10-minute natural release is part of that process, so don’t skip straight to releasing all the pressure when the timer ends.

Why You’ll Love This Recipe

  • One pot for the main meal: Brown the beef and cook the rice in the same insert, with no separate saucepan to wash.
  • An overnight head start: Mix the marinade and refrigerate the beef the evening before you plan to cook.
  • Adjustable heat: Keep the full teaspoon of red pepper flakes for a noticeable kick, or reduce it for a milder dinner.

The Ingredient Breakdown

  • Stew beef: Packages labeled stew beef are usually chuck or round. Chuck is the better pick here because its marbling softens under pressure, while very lean cuts tend to come out dry and chewy. Cut any oversized pieces down to about 1-inch cubes so everything cooks evenly, and trim off large chunks of fat.
  • Long-grain brown rice: Stick with brown rice for this recipe. Rinse it in a fine-mesh strainer until the water runs mostly clear, which washes off surface starch that can make the rice gummy and cause foaming.
  • Low-sodium soy sauce: Regular soy sauce plus extra salt can make the finished dish too salty, so go with low-sodium and season lightly. If you need it gluten-free, use tamari labeled gluten-free.
  • Fresh ginger: Grate it on a microplane so it melds into the marinade. Ground ginger works in a pinch (about ยผ teaspoon), but you lose the fresh, peppery bite.
  • Honey and lime juice: The honey balances the salty soy, and fresh lime juice keeps the flavor bright. Bottled lime juice works, but fresh tastes cleaner.
  • Sesame oil: Half goes into the marinade and half is used for browning. If yours is the dark toasted kind, keep an eye on it during browning because it can start to smoke quickly on high. A neutral oil like vegetable or avocado oil can handle the browning if youโ€™d rather save the sesame flavor for the marinade.
  • Water or beef broth: Low-sodium beef broth gives you a deeper, meatier flavor in the rice. Water works fine and keeps the flavor lighter; however, I find beef broth works best!

How to Make Instant Pot Beef and Rice

Step 1: Mix the Marinade

In a bowl, stir together the soy sauce, 1 tablespoon of the sesame oil, honey, lime juice, garlic powder, onion powder, ginger, and red pepper flakes. Add a small pinch of salt and pepper. The soy sauce already brings plenty of salt, so keep it light.

Step 2: Marinate the Beef

Put the beef cubes in a Ziploc bag, pour in the marinade, seal it, and turn the bag to coat everything. Refrigerate for at least 30 minutes or up to overnight, turning the bag once or twice. Marinate it in the fridge, not on the counter.

Step 3: Brown the Beef

Add the remaining 1 tablespoon of sesame oil to the Instant Pot, press Sautรฉ, and set it to high. When the oil shimmers, lift the beef out of the bag with tongs, letting the extra marinade drip off, and add it to the pot. Throw out the leftover marinade. Brown the beef for 3 to 4 minutes, turning the pieces until theyโ€™re browned on most sides. Wet, marinated beef wonโ€™t get a deep crust, and thatโ€™s fine. Youโ€™re looking for color and some browned bits on the bottom of the pot.

Step 4: Deglaze the Pot

Pour in the broth or water and scrape the bottom of the pot with a wooden spoon until it feels smooth and no dark bits are stuck to it. Press Cancel to turn off Sautรฉ.

Step 5: Add the Rice and Pressure Cook

Stir in the rinsed rice and press it down so itโ€™s under the liquid. Season lightly with salt and pepper. Lock the lid, turn the valve to Sealing, and cook on Pressure Cook (Manual) at high pressure for 22 minutes. The pot will take about 10 minutes to come up to pressure before the timer starts counting down.

Step 6: Release the Pressure

When the timer ends, let the pressure release naturally for 10 minutes. Then turn the valve to Venting to release whatโ€™s left. Keep your hand and face away from the steam.

Step 7: Fluff, Taste, and Garnish

Open the lid and fluff the rice with a fork. The liquid should be absorbed and the rice tender with a little chew. If thereโ€™s still a little liquid in the bottom, put the lid back on and let it sit on Keep Warm for 5 minutes. Taste and adjust the seasoning, then sprinkle with toasted sesame seeds and parsley and serve.

Which Rice Works Here?

Long-grain brown rice is the one I recommend for this recipe because its cook time lines up with the beef. White rice, jasmine, and basmati cook in a fraction of the time, so cooking them in the same pot for 22 minutes leaves you with mush. If you want white rice with this beef, the safer move is to cook it separately and serve the beef over it. Wild rice and wild rice blends need more liquid and more time, so I wouldnโ€™t swap them in without adjusting the whole recipe.

Make It Your Own

For a fresh finish, add sliced green onions when you serve the beef and rice. If you’d like vegetables with it, cook broccoli or green beans separately and serve them alongside or fold them in after pressure cooking. This lets you keep the vegetables as crisp or tender as you like without changing the rice’s cooking liquid.

What to Serve With Beef and Rice

I like a simple side salad with a ginger-based dressing alongside this dish. It gives you something cool and crisp between bites of beef and rice. Steamed or roasted vegetables also work well when you want to round out the meal without making another complicated recipe.

Ingredients

  • 3 Tablespoons soy sauce low sodium
  • 2 sesame oil divided
  • 2 Tablespoon shoney
  • 2 Tablespoons lime juice
  • ยฝ t. garlic powder
  • ยฝ t. onion powder
  • 2 t. fresh ginger finely minced
  • 1 t. crushed red pepper flakes
  • Sea salt and black pepper to taste
  • 1ยฝ lbs stew beef cubed
  • 1ยผ cup water or beef broth
  • 1 cup long-grain brown rice rinsed and drained
  • 1 Tablespoon sesame seeds
  • 3 Tablespoon fresh parsley finely chopped

Instructions

  1. Combine the soy sauce, 1 tablespoon sesame oil, honey, lime juice, garlic powder, onion powder, ginger, and red pepper flakes in a nonreactive bowl. Season with salt and pepper to taste.
  2. Put the beef in a sealable food-storage bag or covered nonreactive container. Add the marinade and coat the beef. Refrigerate for at least 30 minutes or overnight, turning occasionally.
  3. Select Sautรฉ and add the remaining tablespoon sesame oil. Use the original recipe's high setting, reducing the heat if the oil smokes or the honey coating scorches. Lift the beef from the marinade, let excess liquid drip off, and discard the remaining marinade. Brown the beef on its surfaces, about 3โ€“4 minutes in the original method, working in batches if needed and allowing extra time for batches.
  4. Add the water or broth and scrape the bottom thoroughly to loosen all browned bits. Cancel Sautรฉ. Add the rinsed, drained brown rice and make sure it is moistened by the cooking liquid. Season with salt and pepper to taste.
  5. Lock the lid and set the valve to Sealing if required. Cook on high pressure for 22 minutes. Allow additional time for the cooker to reach pressure before the countdown starts.
  6. Gently fluff the rice, taste, and adjust the seasoning. Garnish with the sesame seeds and parsley, if desired, and serve warm.

Notes

Pro Tips:

Rice: Use regular long-grain brown rice. Other varieties need their own tested liquid amounts and timing.
Heat: Reduce the red pepper flakes to ยผ teaspoon or omit for a milder dish.
Timing: Marinating, browning, pressure buildup, and natural release are required parts of the schedule. This is not a 35-minute start-to-finish recipe.
Storage: Refrigerate promptly in shallow, covered containers within 2 hours, or within 1 hour above 90ยฐF. Keep refrigerated for 3โ€“4 days.
Reheating: Add a splash of water or broth, cover with a microwave-safe cover, and reheat, stirring as needed, until the leftovers reach 165ยฐF throughout.
