Not only are these cupcakes festive and fun, but they are also kid friendly! Angela had a blast getting into the kitchen with me this week and whipped up these simple Frankenstein cupcakes.

She may have gotten more frosting on her than the cupcakes, but that’s okay, because she had a blast doing it. Just a few simple ingredients are needed to make these Frankenstein cupcakes.

The frosting is the easiest part of this recipe, as it only requires two ingredients! Because Angela loves vanilla, we used vanilla frosting but you can use buttercream or even cream cheese if you like. Vanilla is the best to get a bright color result from however.

These cupcakes should be stored in an airtight container and can last up to one week. Be sure to keep your monster cupcakes away from heat sources so that your frosting doesn’t get too soft or runny!

You can also store your cupcakes in the freezer for up to three months! To thaw, simply place frozen cupcakes on the counter and allow them to come to room temperature, then enjoy!

What is the best food coloring to use to get a bright frosting?

I like to use gel food coloring to get a bright color result, especially if I am using a darker color. If you use liquid food coloring. The frosting may be too thin and runny which can make decorating difficult!

What else can I do with these Frankenstein cupcakes

The sky’s the limit! You can add so many different flavors of frostings and make all kinds of Frankenstein’s such as green face, blue face, etc. You could even switch it up for monsters like werewolves and vampires! With this simple recipe you are limited only by your imagination!

Frankenstein Cupcakes:

Flour: All purpose flour is needed to make these cupcakes, you can use bleached or unbleached flour whichever you prefer. 

Cocoa: Cocoa powder turns our homemade cupcake batter into soft and rich chocolate cupcakes

Frosting: You can use any type of frosting that your family prefers, homemade or canned. Angela and I whipped up a batch of her favorite homemade vanilla frosting for these cupcakes. 

Chocolate Chips: Chocolate chips make the perfect topping for the top of our monster cupcakes. If you don’t have them on hand feel free to use chocolate sprinkles.

How to Make Frankenstein Cupcakes

Preheat the oven to 350F.

Line a large cookie sheet with cupcake papers and place an Oreo in the bottom of each.

Combine all dry cupcake ingredients first. Whisk well. Add the milk and oil into the mixture and combine to form a batter.

Using a small measuring cup, pour batter into the cupcake liner on top of the Oreo cookie. Fill the cupcake liner about halfway to leave room for it to rise.

Bake at 350F for 15-20 minutes. Let cool completely once finished.

While the cupcakes are baking, prepare frosting and add in green food coloring. Keep in the fridge while the cupcakes bake and cool.

Once the cupcakes are cool, cover in green frosting.

Use candy eyeballs for the eyes on the front of the cupcake, marshmallows for Frankenstein’s ‘neck’, and chocolate chips for his hair.

Ingredients

  • 1 cup all purpose flour
  • ½ cup cocoa powder
  • â…“ cup canola oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp baking soda
  • ½ cup of milk
  • ½ tsp baking powder
  • Sleeve of Oreos, double stuffed
  • Topping:
  • Frosting of choice
  • Green food coloring
  • ½ cup chocolate chips
  • ½ cup mini marshmallows
  • Package of mini candy eyeballs
