Frankenstein Cupcakes

These Halloween Frankenstein cupcakes are so easy to make, and make for a fun spooky dessert treat!

Ingredients

  • 1 cup all purpose flour
  • ½ cup cocoa powder
  • cup canola oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp baking soda
  • ½ cup of milk
  • ½ tsp baking powder
  • Sleeve of Oreos double stuffed
  • Topping:
  • Frosting of choice
  • Green food coloring
  • ½ cup chocolate chips
  • ½ cup mini marshmallows
  • Package of mini candy eyeballs

Instructions

  • Preheat the oven to 350F.
  • Line a large cookie sheet with cupcake papers and place an oreo in the bottom of each.
  • Combine all dry cupcake ingredients first. Whisk well. Add the milk and oil into the mixture and combine to form a batter.
  • Using a small measuring cup, pour batter into the cupcake liner on top of the Oreo cookie. Fill the cupcake liner about halfway to leave room for it to rise.
  • Bake at 350F for 15-20 minutes. Let cool completely once finished.
  • While the cupcakes are baking, prepare frosting and add in green food coloring. Keep in the fridge while the cupcakes bake and cool.
  • Once the cupcakes are cool, cover in green frosting.
  • Use candy eyeballs for the eyes on the front of the cupcake, marshmallows for Frankenstein’s ‘neck’, and chocolate chips for his hair.

Notes

Don't have mini chocolate chips? You can always use chocolate sprinkles!
