These Halloween Frankenstein cupcakes are so easy to make, and make for a fun spooky dessert treat!

Ingredients
1cupall purpose flour
½cupcocoa powder
⅓cupcanola oil
1cupgranulated sugar
2large eggs
1tspvanilla extract
¼tspbaking soda
½cupof milk
½tspbaking powder
Sleeve of Oreosdouble stuffed
Topping:
Frosting of choice
Green food coloring
½cupchocolate chips
½cupmini marshmallows
Package of mini candy eyeballs
Instructions
Preheat the oven to 350F.
Line a large cookie sheet with cupcake papers and place an oreo in the bottom of each.
Combine all dry cupcake ingredients first. Whisk well. Add the milk and oil into the mixture and combine to form a batter.
Using a small measuring cup, pour batter into the cupcake liner on top of the Oreo cookie. Fill the cupcake liner about halfway to leave room for it to rise.
Bake at 350F for 15-20 minutes. Let cool completely once finished.
While the cupcakes are baking, prepare frosting and add in green food coloring. Keep in the fridge while the cupcakes bake and cool.
Once the cupcakes are cool, cover in green frosting.
Use candy eyeballs for the eyes on the front of the cupcake, marshmallows for Frankenstein’s ‘neck’, and chocolate chips for his hair.
