While I love these cinnamon roll donuts as is, you can easily adapt them to suit your preferences. Chopped pecans or walnuts would make another delicious topping in addition to the crumble and icing.
These donuts are also pretty as a picture! Gift them to friends and family over the holidays or add them to your party platters.
🍽 KEY INGREDIENTS
All-purpose flour – Gluten-free flour, such as Bob’s Red Mill, can be used instead.
Cornstarch – This helps create a crumbly and tender texture.
Granulated sugar – Light brown sugar could be used but anything darker will change the flavor and appearance of these donuts, and possibly the texture too.
Buttermilk – This adds flavor, and moisture, and helps create a fluffy donut texture. If you don’t have buttermilk, combine 1 teaspoon of vinegar with the same quantity of milk.
Crumble topping – This includes flour, brown sugar, ground cinnamon, and butter.
Cinnamon icing – This includes powdered sugar, milk, and ground cinnamon.
Vanilla icing – A combination of powdered sugar, milk, and vanilla extract.
Flour – To make your donuts gluten-free, use gluten-free flour such as Bob’s Red Mill instead of all-purpose flour.
Icing flavor – These cinnamon donuts are made with cinnamon icing and vanilla icing. You could use only one of these flavors if you prefer.
Buttermilk – If you don’t have buttermilk, add 1 teaspoon of vinegar to milk as a substitute.
You’ll need mixing bowls, a whisk, donut trays, and a pastry bag.
🔪 HOW TO MAKE
These cinnamon roll donuts are made with simple ingredients that you likely already have in the pantry. Combine this with my easy-to-follow recipe steps, and you have a fail-proof donut treat that’s perfect to enjoy during the fall or whenever that craving hits!
Preheat the oven to 350F and grease the donut trays with non-stick spray.
Combine the wet ingredients in a small bowl, followed by the dry ingredients in a larger bowl. Mix the wet and dry ingredients together until smooth.
Add the donut batter into a pastry bag and pipe the batter into the trays, filling them 2/3 full. Bake the donuts for 7-9 minutes or until slightly dry.
Allow the donuts to rest for 2 minutes before transferring them to a cooling rack. While the donuts cool for 15 minutes, make the crumble topping, cinnamon icing, and vanilla icing.
Dip the donuts into the cinnamon icing and then directly into the crumble topping.
Spoon drizzle the vanilla icing on top of the donuts. Allow the donuts to dry before serving.
💭 COOKING TIPS
Don’t fill the donut trays to more than 2/3 full or they will overflow when baking.
If you don’t have a pastry bag, use a clean plastic bag and cut off a small section of a corner.
Allow the donuts to cool before adding the cinnamon frosting or it will become a thin and runny mess and there won’t be much for the crumble to cling to.
📖 RECIPE VARIATIONS
Looking for easy ways to change these donuts? I have some simple ingredient swaps you could try for small variations or to completely change the flavor!
Make these donuts gluten-free by using gluten-free flour for the donut batter and the crumble topping. Bob’s Red Mill All Purpose Gluten Free flour is my favorite to use!
If you love nuts, you can absolutely use chopped walnuts or pecans on top instead of the crumble topping OR add them into the crumb topping as a crunchy addition.
Use this recipe as a foundation for any flavor of donut. The cinnamon can be left out for plain donuts with vanilla icing, or use maple syrup instead of vanilla extract. You could even make chocolate donuts by adding melted chocolate or cocoa powder to the donut batter.

🙋 FREQUENTLY ASKED QUESTIONS
Use a muffin pan if you don’t have a donut tray. Pour the donut batter into the greased muffin pan and bake. These will come out looking more like muffins than donuts, but they will still taste delicious! You could even cut a hole in the center of each muffin-donut with a small round cookie cutter so that they resemble donuts.
I haven’t tried canned cinnamon rolls when making these donuts, but I’m sure it could work. You’d need to twist the rolled-out dough around each donut tray mold for it to bake into the shape of a donut. If you give this a try, please comment below and let me know how it works!
This recipe calls for all-purpose flour. You can use gluten-free alternatives, such as Bob’s Red Mill, for gluten sensitivities.
🧊 STORING AND ♨️ REHEATING
These cinnamon roll donuts can be stored in an airtight container at room temperature or in the fridge for up to one week. Keep in mind that the longer these donuts are stored, the softer and more stale they will become.
Unfrosted donuts are best for freezing. Wrap them tightly with plastic wrap and store them in an airtight container or freezer bag in the freezer for up to 3 months.
Thaw frozen donuts at room temperature, reheat them in the microwave for 30-60 seconds with a damp paper towel over them, and then apply fresh icing.
