It’s pumpkin season ya’ll! Angela and I can’t be more excited for fall. As soon as school starts back in our local area, I have to break out all the pumpkin recipes. I live by the motto that fall is for PSL’s , sweaters, and pumpkin recipes.

My favorite thing about fall though is getting to bust out boots! This recipe is all about breakfast with Instant Pot Pumpkin Oatmeal. It’s time to start your day by eating some pumpkin flavored oatmeal that I know that you are craving. ! I won’t judge you if you eat this oatmeal while drinking your Pumpkin Spice Latte.

I love both kinds of oats. However, old fashioned oats are what you want to use for this recipe. Old fashioned oats have a richer, chewier texture and they take longer to cook, which makes them perfect for overnight oatmeal or Instant oatmeal recipes because you can throw everything in the pot in the evening and let it do its thing while you sleep.

Whereas, Quick cooking oats are always rolled very thin so they cook faster, which makes them ideal for on the go or preparing ahead of time and cooking in batches.

What is the perfect water to oatmeal ratio? 

Each type of oats uses a different water to oatmeal ratio. For rolled oats the perfect ratio is 2 to 1. So, two cups of liquid to 1 cup of oats. You don’t have to use water, you can use milk for extra creamy oatmeal.

Can I use Steel Cut Oats?

Absolutely! You can follow along this recipe to prepare the steel cut oats.

Can I add different toppings to this oatmeal? 

Absolutely, you can add any type of toppings to this oatmeal that you would like. I like to add sliced bananas, or extra cinnamon to the top. You can make this Instant Pot pumpkin oatmeal your own.

Can I double this recipe? 

Yes, you don’t even need to adjust the cook time when you are doubling this recipe in that Instant Pot. Be sure to double your liquid and add your oats for the best results.

How should I reheat this Instant Pot Pumpkin Oatmeal? 

You can reheat your Instant Pot oatmeal in the microwave or on the stove.

Stove Top: Reheat on a medium low heat for up with about one tablespoon of milk or almond milk until warm. Stirring occasionally to prevent sticking.

Microwave: Reheat in the microwave for 30 seconds at a time, until warm all through the center. I like to add a small splash of milk to help the Instant Pot Pumpkin Oatmeal retain its creamy texture.

Instant Pot Pumpkin Oatmeal 

Pumpkin Puree: You can use canned pumpkin puree or homemade pureed pumpkin.

Oats: Old fashioned oats or rolled oats, depending on what they are called in your area.

Almond Milk: You can substitute this for cow’s milk or even coconut milk.

Pumpkin Pie Spice: This is made Cinnamon, nutmeg, cloves, allspice and ginger. If you do not have this one hand you can use a mixture of these ingredients or just cinnamon.

Sweetener: I like to use maple syrup, but you can use the sweetener of your choice.

Nuts: I like to use chopped pecans, or chopped walnuts.

How To Make 

Step 1: Add pumpkin puree, oats, almond milk, water, pumpkin spice and salt into the bottom of an Instant Pot.

Step 2: Use a spoon or spatula to stir, make sure to mix all the ingredients.

Step 3: Attach the lid, turn to lock and set the valve to “Sealing”.

Step 4: Set to cook on high pressure for 1 minute and let the pressure naturally release for 10 minutes.

Final Step: When all the pressure is released, remove the lid and stir with a spoon. Serve with maple syrup and pecans on top and enjoy!
