Ingredients

  • 3 Zucchinis (or more depending on how many people you are serving)
  • Extra Virgin Olive Oil
  • Grated Parmesan Cheese
  • Cherry Tomatoes
  • Approximately 1 tbsp Rosemary (chopped)
  • 1 tsp cracked black pepper
  • 1 tsp coarse sea salt

Instructions

  • Pre-heat oven to 375.
  • Slice the zucchinis into halves length wise and then cut your halve into half width wise. This is how you are creating your zucchini "sticks".
  • Slice Cherry tomatoes into somewhat thin slices.
  • Lightly coat EVOO onto of your zucchini sticks.
  • Season with your salt, pepper and Rosemary. Sprinkle evenly for a nice light coating to enhance the flavor.
  • Layer sliced cherry tomatoes across the zucchini sticks.
  • Finally, sprinkle grated parmesan cheese on top of zucchini sticks. I love cheese, so you will see a nice healthy coating on it.
  • Bake in the oven for approximately 20 minutes, and your decilious zucchini sticks will be done. If you lost count of time, then note the top of the cheese will be melted with a slight brown hue.
