Vegetarian Stuffed Sweet Peppers Recipe
I love sweet bell peppers, and love the Mini varieties of them! They’re just great for all different types of recipes, and it’s great that you can cook and eat them whole! They have a super great sweetness to them, which is great when cooking with them as
they tend to help balance out (and add a little flare) to any recipe you like. In moving forward in doing clean recipes, I immediately had to make this. Now, I didn’t really come with this recipe on my own. It’s actually a recipe inspired from what one of my chefs used to make at my restaurant I used to work in a few years ago. I just took it to a different level and added my own twist to it. I hope you enjoy this recipe as much as I enjoyed eating it!
Vegetarian Stuff Sweet Peppers
Ingredients
- 14 Mini Sweet Peppers
- 2 Cups of Diced (and minced) organic button mushrooms
- 11 Ounces of organic baby spinach (This is just a large container of it)
- 1 Teaspoon of fresh garlic
- 1 Teaspoon of course sea salt
- 1/2 Teaspoon of cracked mixed pepper
- 1/4 Cup of water
- Organic Evoo
- Organic Mozzarella (Diced into rectangular, small sized cubes)
