Step 1: Cool the Cheesecake

After the cheesecake is done, you will want to place it flat on a shelf in the fridge. Allow the cheesecake to cool entirely! Why should you let it cool entirely? It's easier to cut because it's firmer. (Allow to chill in the fridge overnight for best results)

Pro Tip: If you're going to cut into slices, then place wax paper between the slices. It makes it easier to separate later. (You can share….if you want to, that is)

Step 2: Place on cardboard

Place your cheesecake on coated cardboard. The sturdy cardboard allows for a more reliable surface to store the cheesecake on once in the freezer. (You can find the cardboard in most cake decorating sections)

You can buy different sized cardboard pieces based on how you plan on storing your leftover cheesecake.

Step 3: Wrapping Cheesecake

If you cut your cheesecake into slices, you can wrap the wax paper as well. First, wrap the entire cheesecake (or whatever you're going to freeze) in plastic wrap. Then wrap in aluminum foil. Make sure to write your date on the outside! Make sure there aren't any openings before storing them in the freezer.

(If you are keeping your cheesecake complete and just adding in wax paper between the slices, this will make it easier to portion out when you just want one piece later)

How do I thaw cheesecake?

To best enjoy your cheesecake after it has been frozen, take it out of the freezer and remove the aluminum foil. Allow thawing in the fridge for 2-4 hours before eating. If you have a serious craving and want your cheesecake NOW, you can microwave individual slices for 30 seconds, and it's ready to eat!
