INGREDIENT NOTES
- Pasta – Use uncooked pasta, such as spaghetti fettuccine, or any other of your preferred choice. Use gluten-free or whole-grain pasta for dietary sensitivities. As a low-carb alternative, consider zucchini noodles or spaghetti squash.
- Cherry tomatoes – provides a bright, sweet, and slightly acidic flavor which contrasts beautifully to the creamy and rich burrata. Grape tomatoes or canned diced tomatoes (drained) can be used instead.
- Garlic – Freshly minced garlic is always going to provide the best flavor, but you can use pre-minced garlic instead.
- Basil paste – If you can't find basil paste, use freshly chopped basil instead. Store-bought pesto or 1/2 teaspoon of dried basil are additional options.
- Olive oil – In recipes that call for minimal ingredients, always be sure to use high-quality oil as this will impact the overall flavor of the dish. Avocado oil or unsalted butter can be used instead.
- Salt – To taste. Don't forget to also salt your pasta water!
- Italian seasoning – To taste. You'll need about 1 teaspoon for this recipe.
- Burrata balls – You'll need 2 burrata balls (each approximately 4 oz. in weight). If you can't get burrata balls, use fresh mozzarella, ricotta, or a mix of cream cheese and heavy cream for a similar creamy texture. These alternatives will alter the flavor slightly.
- Optional garnish – Top each serving with fresh basil leaves and grated Parmesan cheese.
PASTA COOKING TIPS
While pasta is typically known in most households as an easy option for feeding the family, don't be mistaken – there, in fact, quite a few tips and tricks that you can and should use to make delicious pasta with the best texture! Here are my top recommendations when making any pasta dish:
- Salt the Water: Many people forget to add salt to the water that they are boiling their pasta in. Add a heaping tablespoon of salt once the water is boiling. It should taste like the sea. But what about adding oil to the water? Oil can make it harder for sauces to stick to your boiled pasta, which is why I avoid it.
- Stir the Pasta: Stirring the pasta at the start of boiling will help prevent it from clumping at the bottom of the pot.
- Cook Until Al Dente: Always follow the cooking time of the pasta packaging and then reduce that by about 2 minutes for tender al dente pasta. The pasta will continue to cook when heated in the pan with the sauce. To prevent it from becoming mushy and overly soft, make sure to only cook it until al dente.
- Reserve Pasta Water: Before draining the pasta water, save about a cup of it. The starchy liquid helps thicken sauces and helps them cling to the noodles.
- Avoid Rinsing the Pasta: Rinsing the pasta will result in washing the starch off the surface of the pasta. That starch is what helps sauce to stick to it better. Unless youโre making a cold pasta salad, I recommend that you avoid rinsing the pasta.

Refrigeration Instructions
You can make the sauce 1-2 days ahead of time and store it in the fridge, ready to mix with freshly boiled pasta and heated in a pan.
STORAGE INSTRUCTIONS
- Refrigeration: Store leftover creamy burrata pasta in an airtight container in the fridge for 2-3 days.
- Reheat: Add a splash of cream or milk to the pasta as you reheat it in a pan over medium low heat to loosen it from refrigeration.
- Freezer: While some recipes for burrata pasta will allow for freezing, I find that the delicate texture of the melted cheese can become somewhat altered through freezing and thawing.

Creamy Burrata Pasta
Ingredients
- 100 g about 3.5 oz uncooked pasta (spaghetti, fettuccine, or your choice)
- 2 cups 10 oz cherry tomatoes
- 1 tbsp minced garlic
- 1 tbsp basil paste or freshly chopped basil
- 1 tbsp olive oil
- Salt to taste
- Italian seasoning to taste (about 1 tsp)
- 2 burrata balls each approximately 4 oz
- Optional garnish: Fresh basil leaves and grated Parmesan cheese
Instructions
- Bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of the pasta water, then drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the cherry tomatoes, minced garlic, basil paste,ย salt, and Italian seasoning. Sautรฉ for 5โ7 minutes, stirring occasionally, until the tomatoes soften and release their juices.
- Transfer the tomato mixture to a blender. Add the two burrata balls and blend until smooth and creamy. Adjust seasoning with additional salt, if needed. If the sauce is too thick, add a splash of the reserved pasta water and blend again until it reaches your desired consistency.
- Return the cooked pasta to the skillet (or a large mixing bowl). Pour the creamy burrata-tomato sauce over the pasta and toss to coat evenly. Heat gently over low heat, if necessary, to warm through.
- Plate the pasta and garnish with fresh basil leaves and grated Parmesan cheese, if desired. Serve immediately.
