Ingredients

  • 1 ¼ cup all purpose flour
  • 1 ¼ tsp baking powder
  • ¾ cup sugar
  • 2 Large Eggs
  • 1 tbsp vanilla extract
  • cup vegetable oil
  • ½ cup buttermilk
TOPPING
  • White Frosting
  • Black Icing in Tube
  • Toothpick
FILLING
  • 8 oz cream cheese softened
  • 1/2 - 1 cup granulated sugar
  • red food coloring

Instructions

  1. Preheat the oven to 350F.
  2. Combine all ingredients into a medium sized bowl and combine well.
  3. Line a large cupcake pan with cupcake liners. Spray lightly with cooking spray if desired.
  4. Prepare cream cheese mixture for the center.
  5. Place one tablespoon of batter into the pan. Place a small amount of the red cream cheese into the pan on top of the first tablespoon. Cover the cream cheese with more batter.
  6. Bake the cupcakes for 20-23 minutes. Let the cupcakes cool completely once finished.
  7. Cover the cooled cupcake with frosting and then draw several circles on the top of the cupcake with black icing using either a tube or a toothpick. If you are not using a spider in the center, make your center circle very small.
  8. Drag several lines from the center of the cupcake to the edge in order to create a web look. Enjoy!
