Ingredients
- 2 ½ - 3 pounds white potatoes skin on, chopped into 1 ½ inch pieces
- 1 green bell pepper diced into chunks
- 1 red bell pepper diced into chunks
- 1 medium sweet onion chopped
- 1 ½ tablespoons Trader Joe’s 21 Seasoning Salute
- 1 teaspoon garlic powder
- ¼ teaspoon chili powder
- 2 teaspoons smoked paprika
- 5 tablespoons salted butter diced
- Kosher salt and black pepper to personal taste (I used a teaspoon of each)
Instructions
- Add all ingredients into the slow cooker, except butter, and mix well until everything is evenly coated. You want to make sure that the chili powder is not concentrated in one spot.
- Layer butter on potatoes.
- Cover and cook on high for approximately 4 hours. Check potatoes after 3 hours if your potatoes are cut smaller.
- You can add extra salt and pepper to finish if you like.
