Melting Snowmen Cupcakes

These 30-minute, from-scratch cupcakes look like adorable melting snowmen and are so easy, you'll even let the kids help in the kitchen!

Ingredients

For Cupcake:

  • 1 ¼ cup flour
  • cup canola oil
  • ½ tsp baking powder
  • 1 cup granulated sugar
  • ¼ tsp sea salt
  • 1 tbsp vanilla extract
  • 5 oz buttermilk
  • Two eggs

For Topping:

  • White frosting of choice
  • Large marshmallow not oversized
  • Black icing
  • Orange icing
  • Colorful M&Ms

Instructions

  • Draw your marshmallow faces first and then set them aside. I did black dots for the eyes and mouth and then a sliver of orange for the nose—Preheat the oven to 350F.
  • Beat eggs and sugar together in a medium bowl first. Add vanilla, oil, and buttermilk in.
  • Next, combine all dry ingredients in a large bowl and blend well.
  • Slowly add the wet ingredients to the dry ingredients while stirring. Combine all ingredients well.
  • Line a cupcake pan with cupcake liners. Spray lightly with oil if desired.
  • Scoop the cupcake batter into the liners, filling no more than ¾ of the way.
  • Bake at 350F for 20-23 minutes. Let cool completely before frosting.
  • To assemble the melting snowman, frost the cooled cupcake first. Add the marshmallow face you previously put together. Use black icing to draw the 'stick' arms. Use M&Ms for the snowman's buttons as a final, colorful touch. Enjoy!
