Pro Tips for Perfect Honey Garlic Chicken

  • Dry chicken crisps best: pat it dry before the cornstarch. Surface moisture is what keeps bites from getting crispy.
  • Single layer, always: crowding traps steam and gives you soft, pale chicken. Batch it out and it is worth the extra few minutes.
  • Fix a runny sauce: if your glaze is too thin, stir in a slurry of a teaspoon of cornstarch mixed with a little cold water and let it simmer until glossy.
  • Check the temp: chicken is done at 165°F in the center. Bite-sized pieces get there fast, so do not walk away.
  • Sauce while hot: toss the chicken in the glaze while everything is hot so it grabs on and caramelizes instead of sliding off.
