Olive Garden Copycat Instant Pot Zuppa Toscana

Ingredients

  • 1 pound Mild Italian ground sausage
  • 1 tbsp olive oil
  • 3 cups chopped kale or spinach
  • 1 white onion diced
  • 3 cloves garlic minced
  • 2 Russet potatoes cubed in chunks (skin on)
  • 1 teaspoon oregano
  • 2 tsp sea salt
  • 1 tsp cracked pepper
  • 1 cup cream
  • 6 cups chicken broth

Instructions

  • Press Sauté button on Instant Pot. Once heated, add olive oil and sausage. Cook sausage until browned.
  • Add onion, garlic, and potatoes. Cook for 3 minutes.
  • Add in chicken broth, oregano, salt and pepper. Close and lock lid, and set vent to sealing position on lid. Cook on High Manual Pressure for 5 minutes.
  • Once done, Quick release pressure. Stir in cream and baby spinach. Serve once spinach has wilted.

Notes

  • You can easily add an extra potato, and you will not have to add extra time.
