Ingredients
1poundMild Italian ground sausage
1tbspolive oil
3cupschopped kale or spinach
1white oniondiced
3clovesgarlicminced
2Russet potatoescubed in chunks (skin on)
1teaspoonoregano
2tspsea salt
1tspcracked pepper
1cupcream
6cupschicken broth
Instructions
Press Sauté button on Instant Pot. Once heated, add olive oil and sausage. Cook sausage until browned.
Add onion, garlic, and potatoes. Cook for 3 minutes.
Add in chicken broth, oregano, salt and pepper. Close and lock lid, and set vent to sealing position on lid. Cook on High Manual Pressure for 5 minutes.
Once done, Quick release pressure. Stir in cream and baby spinach. Serve once spinach has wilted.
Notes
You can easily add an extra potato, and you will not have to add extra time.
