Fruit and Nut Christmas Cake

Ingredients
  

For the Cake
  • 1/2 cup sour cream
  • 1 cup chopped dates
  • 1 1/2 cups all-purpose flour
  • 1/3 cup butter
  • 1 cup chopped walnuts
  • 2 cups raisins
  • Lemon zest
  • 1/2 cup organic whole dried cherries
  • 2/3 cup granulated sugar
  • 1 egg
  • 1 ½ teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 ounces rum
For the Glaze
  • 2 cups powdered sugar
  • 3 tbsp milk

Instructions
 

  1. Mix sour cream with baking soda
  2. In another bowl add butter and mix It with sugar till fluffy. Add lemon zest and an egg. Mix again and add sour cream with baking soda. Add flour. Mix again.
  3. In a large bowl combine all dried fruits and walnuts with ¼ cup of flour and salt.
  4. Add fruits to the batter. Mix with a spatula.
  5. Spread your cake pan with oil and transfer batter to it.
  6. Bake for 1 hour (325 ° F) and 30 minutes (355° F). You can cover it with a foil if needed.
  7. Make a glaze: mix together powdered sugar and milk till smooth.
  8. Make holes in the cake with a skewer and pour rum over it. Cover with glaze. Garnish with chopped nuts
