Ingredients
For the Cake
- 1/2 cup sour cream
- 1 cup chopped dates
- 1 1/2 cups all-purpose flour
- 1/3 cup butter
- 1 cup chopped walnuts
- 2 cups raisins
- Lemon zest
- 1/2 cup organic whole dried cherries
- 2/3 cup granulated sugar
- 1 egg
- 1 ½ teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 ounces rum
For the Glaze
- 2 cups powdered sugar
- 3 tbsp milk
Instructions
- Mix sour cream with baking soda
- In another bowl add butter and mix It with sugar till fluffy. Add lemon zest and an egg. Mix again and add sour cream with baking soda. Add flour. Mix again.
- In a large bowl combine all dried fruits and walnuts with ¼ cup of flour and salt.
- Add fruits to the batter. Mix with a spatula.
- Spread your cake pan with oil and transfer batter to it.
- Bake for 1 hour (325 ° F) and 30 minutes (355° F). You can cover it with a foil if needed.
- Make a glaze: mix together powdered sugar and milk till smooth.
- Make holes in the cake with a skewer and pour rum over it. Cover with glaze. Garnish with chopped nuts
