Crockpot Beef Tips and Gravy

Tender pieces of beef cook slowly in a rich mushroom gravy flavored with onion, garlic, Worcestershire sauce, and thyme. Serve the beef tips over mashed potatoes, rice, or egg noodles for a comforting family dinner.

Ingredients
  

  • 3 pounds stew meat or steak tips
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • 1 0.87-ounce packet brown gravy mix
  • 1 onion diced
  • 3 garlic cloves minced
  • 2 cups low-sodium beef broth
  • 3 tablespoons cornstarch
  • 1 10.5-ounce can cream of mushroom soup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Mashed potatoes rice, or egg noodles, for serving
  • Chopped fresh herbs for garnish

Instructions
 

  1. Place the stew meat in a large mixing bowl. Season with salt and black pepper, then toss to coat.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the beef in a single layer and sear for about 3 minutes per side, or until browned. Work in batches to avoid overcrowding the skillet.
  4. Transfer the seared beef to the bottom of a 6-quart crockpot.
  5. Sprinkle the gravy mix over the beef. Add the diced onion and minced garlic.
  6. Whisk the beef broth and cornstarch together in a bowl until the cornstarch is completely dissolved.
  7. Stir in the cream of mushroom soup and Worcestershire sauce. Pour the mixture over the beef.
  8. Add the dried thyme and bay leaf. Gently stir to coat the beef.
  9. Cover and cook on LOW for 7 to 8 hours, or until the beef is tender and can be easily cut with a fork.
  10. Remove and discard the bay leaf. Stir the gravy, then serve the beef tips over mashed potatoes, rice, or egg noodles. Garnish with fresh herbs if desired.

Notes

  • Cut any larger pieces of stew meat so the beef cooks evenly.
  • Sear the beef in batches to help it brown instead of steam.
  • If the beef is still chewy after 8 hours, continue cooking it on LOW for another 30 to 60 minutes.
  • Refrigerate leftovers in an airtight container for up to 4 days.
  • Reheat over medium-low heat, adding a splash of beef broth if the gravy is too thick.
  • Freeze cooled beef tips and gravy in a freezer-safe container for up to 3 months.
