Christmas Meltaway Cookies

If you've got an hour, you've got time to make these gorgeous Christmas Meltaway Cookies with an easy decorating technique that will make you feel like a pro! These melt-in-your-mouth, soft and buttery cookies will be a hit at every party.

Ingredients

For the Cookie Dough:

  • 1 ¼ cup all-purpose flour
  • 1 1/2 sticks unsalted butter softened
  • 1/2 cup cornstarch
  • 1 tsp vanilla bean paste
  • 1/2 cup powdered sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Royal icing:

  • 1 and ½ cup powdered sugar
  • ½ tsp vanilla extract
  • 1 tsp light corn syrup
  • 2.5 tbsp room temp water
  • Pinch of sea salt

Christmas tree:

  • Green icing in a tube
  • Christmas sprinkles with stars

Instructions

  • Preheat the oven to 350F.
  • In a medium bowl or stand mixer, beat together the cornstarch, powdered sugar, and butter. Add in the vanilla bean paste and beat again.
  • Measure out the salt and flour in a separate bowl. Stir to combine, then transfer to the dry ingredients to the sugar and butter mixture. Stir until everything bunches together into a dough ball.
  • Using a rounded tablespoon, place the cookies on a parchment-lined cookie sheet about 1 inch apart.

Bake for 8-10 minutes, being careful not to overbake. Because these are moist meltaway cookies, they are done when the bottom edges are slightly brown, and the cookie has set. Let cool completely before adding royal icing.Royal icing/topping:

  • Stir together all the royal icing ingredients in a bowl.
  • Once the cookies are cooled, use a large spoon to start the icing in the center of the cookie. Leave room around the edges for a classic look!
  • Gently shake the cookie to even out the icing. Let the iced cookies sit for a minimum of five minutes before moving to the next step. A shell should form from the icing.
  • To make the Christmas tree, start at the top with your green tube of icing and zig-zag your way down while slowly making wider strokes. Carefully add sprinkles and a star at the top.
