Slow Cooker Tater Tot Casserole

Your family will go crazy over tater tots mixed with onions, ground turkey, black beans, and a best of all— melted cheese. This dish hits the spot on a chilly, rainy afternoon.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground Turkey 99% Fat Free
  • 1/2 cup sweet onion diced
  • 1 – 15 oz can black beans drained and rinsed
  • 1 – 15 oz can corn drained
  • 1 – 15 oz can diced tomatoes
  • 1 cup chunky style salsa
  • 1 - 4.5 oz can chopped green chilies drained
  • 1 tablespoon taco seasoning mix
  • 1 – 10 oz can mild red enchilada sauce
  • 1 – 16 oz package frozen tater tots
  • 2 cups shredded cheddar – jack cheese

Instructions
 

  1. Heat olive oil in a large skillet over medium high heat. Add onions and sauté for 3-4 minutes or until soft. Then add in ground turkey. Cook until no longer pink. Once done, remove from heat and set to the side.
  2. In a large bowl, add black beans, corn, salsa, green chilies, tomatoes, taco seasoning, enchilada sauce, and cooked ground turkey. Stir to mix ingredients well.
  3. Spread half of the tater tots onto the bottom of the slow cooker; top with ground turkey mixture. Layer 1 cup of cheese on top, and finish with remaining tater tots. Cover and cook on Low heat for 5-6 hours or High heat for 3-4 hour. Add cheese during the last 30 minutes of cooking time.
