Ingredients
- 1 pound Mild Italian ground sausage
- 1 tbsp olive oil
- 3 cups chopped kale or spinach
- 1 white onion diced
- 3 cloves garlic minced
- 2 Russet potatoes cubed in chunks (skin on)
- 1 teaspoon oregano
- 2 tsp sea salt
- 1 tsp cracked pepper
- 1 cup cream
- 6 cups chicken broth
Instructions
- Press Sauté button on Instant Pot. Once heated, add olive oil and sausage. Cook sausage until browned.
- Add onion, garlic, and potatoes. Cook for 3 minutes.
- Add in chicken broth, oregano, salt and pepper. Close and lock lid, and set vent to sealing position on lid. Cook on High Manual Pressure for 5 minutes.
- Once done, Quick release pressure. Stir in cream and baby spinach. Serve once spinach has wilted.
Notes
- You can easily add an extra potato, and you will not have to add extra time.
