Homemade DIY Cheez-its Recipe

Ingredients
  

  • 1 8 oz bag of extra sharp shredded cheese
  • 1/2 stick of salted butter cut into cubes
  • 1 teaspoon of salt
  • 1 teaspoon of Dry prepared mustard
  • 1 cup of unbleached all purpose flour
  • 2 tablespoons ice water

Instructions
 

  1. In a bowl for a kitchen aid mixer (or other mixer) with a paddle attachment, add all ingredients EXCEPT the water.
  2. Mix on low speed for about 5 minutes, or until all ingredients are mixed well.
  3. Slowly add in cold water. You might need a little extra water, but only because you don't want your dough to be dry or pebbly.
  4. Take dough out of bowl and pat into a disk shape and wrap in plastic wrap and place in refrigerator for an hour.
  5. Preheat oven to 375 Degrees F.
  6. Divide dough into 4 pieces, and on a light floured surface start rolling out the dough until it's very very thing. Less than 1/8". You can use a pastry cutter, but I used a pizza cutter to make my square pieces and shapes. If you have small & fun cookie cutters then use them! Just makes them more fun to eat.
  7. Transfer to a cookie sheet with a piece of parchment paper on it, I prefer a silpat.
  8. Bake for about 10 - 12 minutes, or until puffed and edges are slightly browned.
  9. Pull out of oven and allow to cool for a couple of minutes before transferring them to a cooling rack.
