Ingredients
  

  • 2 pounds boneless skinless chicken breast, cut into one inch strips
  • 1 red bell pepper cut into strips
  • 1 green bell pepper cut into strips
  • 1 yellow bell pepper cut into strips
  • One can of rotel with green chiles
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

  1. Pour half of the rotel into the slow cooker, spread evenly.
  2. Add half of the red, green, and yellow bell peppers, spread evenly.
  3. Add strips of chicken.
  4. Add remaining ingredients including the remaining peppers and tomatoes.
  5. Stir gently.
  6. Cover and cook on low for 3 hours or high for 1.5 hours.
  7. Use a slotted spoon to scoop fajita mixture into tortillas.
  8. Top with cheese and any other condiments of your choice.
