Cooking Instructions

Step 1
Brown the Italian hot sausage in a large pot over medium-high heat for about 7 minutes. Drain the sausage on a paper towel lined plate. Set aside.

Add the the broth, canned tomatoes, and sausage. Increase the heat to high and allow the soup to reach a boil. Once boiling, add in the tortellini, kale, and heavy cream. Reduce the heat and simmer for 10 minutes.

💭 COOKING TIPS

It’s important that you only add the kale and pasta towards the end of the cooking time as the kale will wilt and soften quickly. The tortellini should be soft and tender, but not overcooked that it becomes mushy.

You can easily increase the heat in this soup by adding cayenne pepper or red pepper flakes to the soup mixture, use Ro-Tel canned tomatoes, or add some hot sauce.

If you opt to use frozen tortellini, add more minutes to the simmering of the soup or the pasta may be undercooked.

Ingredients

  • 16 oz. Italian hot sausage
  • 1⁄2 medium onion, finely chopped
  • 3 carrots, chopped
  • 4 gloves garlic, minced
  • 4 cups chicken broth
  • 28 oz. can crushed tomatoes
  • 2 cups refrigerated cheese tortellini 1 cup heavy/whipping cream
  • 3 cups fresh kale (optional)
  • Salt & pepper to taste

Instructions

  1. In a large soup pot, add the sausage and sauté over medium-high heat until browned, approximately 7 minutes.
  2. Take out the sausage and allow it to drain on a paper towel lined plate.
  3. In the same pot, sauté the onions and carrots for approximately 4 minutes,
    add in the garlic and continue to sauté for another minute.
  4. To the pot, add in the chicken broth, canned tomatoes, and sausage. Increase the heat to high and bring the pot to a boil.
  5. Once the pot has begun to boil, add in the tortellini, kale, and heavy cream, then reduce the heat to a simmer. Simmer for approximately 10 minutes.
