HOW SHOULD I STORE RICE KRISPIE EASTER TREATS?

You can store these Rice Krispie Easter treats in an airtight container at room temperature for 2-3 days with a sheet of parchment paper to line the bottom of the container, which will help prevent the treats from sticking.

Remember that the longer these Rice Krispie treats are stored, the more hard and stale they are likely to become.

CAN I REFRIGERATE THESE EASTER TREATS?

While you could refrigerate these crunchy Easter treats, this could affect their texture, hardening and drying them out. If you are planning to extend their shelf-life, consider freezing them instead.

CAN I FREEZE RICE KRISPIE EASTER TREATS?

It’s possible to freeze these Rice Krispie Easter Treats for up to 3 months which is great for leftovers or if you plan to make these in advance.

Once assembled and cut into slices, transfer the individual pieces to a parchment-lined baking tray and flash-freeze them for about 2 hours. This will help harden the treats so that they aren’t as sticky for storage purposes.

Wrap the individual rice Krispie treats in wax paper and then store them in a Ziploc bag in the freezer.

WHAT VARIATIONS CAN I MAKE TO THIS RECIPE?

  • While I’ve made these Rice Krispie Easter Treats specifically with Easter in mind, you can easily use this recipe as a foundation for other holidays and special occasions by using different cereals and changing the mini chocolate eggs to different types of candy such as M&M’s or chopped up Reese’s pieces.
  • I’ve used Cadbury’s mini eggs for this recipe, but you could use another brand, such as Hershey’s Eggies. 
  • I’ve cut individual pieces into squares, but you could use a cookie cutter and create fun shapes with these treats. There may be some wastage when using cookie cutters.
  • Enhance the bright colors in these treats by sprinkling some colorful sanding sugar over the rice Krispie treats while they are still slightly sticky, or add some food coloring to the cereal mixture.

TIPS FOR MAKING RICE KRISPIE EASTER TREATS

  • You can either grease the pan with butter or with a nonstick cooking spray which will help to prevent the cereal mixture from sticking to the pan. Lining the pan with parchment paper is another option, although it can prove to be challenging to spread the rice Krispie mixture evenly across it without it moving.
  • I’ve used a buttered spatula to press the cereal mixture into the bottom of the pan, but you can use your hands instead. When using your hands, grease them with butter to prevent the mixture from sticking to your skin.
  • Don’t press the rice Krispie mixture too hard when assembling it in the pan otherwise, it will result in tough treats instead of soft and chewy treat bars.
  • Don’t omit the salt in this recipe. It helps to balance the flavors, especially since these treats are quite sweet.
  • Don’t use a smaller pan with the aim of making thicker rice Krispie treats. From experience, I’ve found thicker cereal treats to be difficult to eat.

You'll love these Easter Rice Krispies treats with min chocolate Cadbury easter eggs!

Ingredients

  • 5 tbsp unsalted butter
  • 7 cups mini marshmallows, divided
  • 1 tsp pure vanilla extract
  • 1⁄4 tsp kosher salt
  • 6 cups Rice Krispie cereal
  • 1 2⁄3 cup crushed or chopped Mini Eggs, divided
  • 1 cup white chocolate chips

Instructions

  1. Butter a 9x9 baking dish.
  2. In a large saucepan, melt the butter over medium heat. Once melted, add 6 cups of mini marshmallows.
  3. Reduce heat to low and continue stirring until the marshmallows are melted. Remove from the heat and stir in the vanilla and salt.
  4. Add the rice krispie cereal and the remaining 1 cup of marshmallows. Gently stir until combined. Add 1 cup of mini eggs and fold them in. Being careful not to break the rice krispie but also moving quickly so the chocolate doesn’t melt too much.
  5. Using a buttered spatula, GENTLY press the rice krispie into the pan so that it is spread out evenly. The harder you press the harder the treats will be. Set aside.
  6. Melt the white chocolate in the microwave in short bursts of 20 seconds, stirring each time.
  7. Drizzle the melted white chocolate over the bars. Sprinkle the remaining 1 cup of mini eggs on top.
  8. Allow to set at room temperature for 1 hour.
  9. Cut into 9 large bars or 18 small bars.

● butter a spatula (or your fingers) when pressing the rice krispie mixture into the baking dish to prevent a sticky mess!
● for soft and chewy rice krispie treats, press them GENTLY into the pan. Otherwise they will be tough!
