Instant Pot Chipotle Rice

Instant Pot Chipotle Rice is tender rice filled with cilantro and lime flavor. This recipe gives you a fluffy rice that is bursting with zesty citrus flavor. Yes, I’m one of those people that totally loves the taste of cilantro. If you don’t like cilantro, then you can easily swap out with parsley.

Rice is serious business in our household.  We add rice as a side dish to meals often because it’s budget friendly and very versatile. I can make rice in a variety of different flavors to suit the flavor profile of the other dishes that I am cooking.  

I think that cilantro lime rice goes well with any type of meal that you slather beans over!  We eat it with tacos, burritos, grilled meats or just about anything else I can think of serving it with.

Frequently Asked Questions About Instant Pot Chipotle Rice 

What type of rice should I use? 

Long grain rice.  When cooking rice in the pressure cooker you will always want to use long grain rice.  Quick cooking rice does not work well in the Instant Pot. 

Can I use brown rice in this recipe? 

Yes, you can use brown rice to make this recipe. However, you will need to adjust the water amount and pressure cooking time based on your pressure cookers directions to make sure you get the correct consistency for brown rice.

How do I store the Copycat Cilantro Lime Chipotle Rice? 

Fridge: Store leftover chipotle rice in the fridge for up to five days.  Make sure to keep your rice in a tightly sealed airtight container. 

Freezer: Place leftover rice inside of a freezer safe container or freezer bag.  Rice stores well in a freezer for up to 4 months.  To thaw, place in the fridge overnight and then reheat per instructions below. 

What is the best way to reheat rice? 

I have found that reheating rice works best in the microwave or on the stove top.  

Stove top: Place your leftover rice in a sauce pot and reheat on medium heat.  Add in about one tablespoon of water to your sauce pot with your rice to prevent sticking and burning.  Cook until the water absorbs and your rice is fluffy again. 

Microwave: Add in one teaspoon of water to your rice and reheat for about 2 to 3 minutes until completely warmed through.

Instant Pot Chipotle Rice 

  • 2 cups white rice
  • 2 ½ cups water
  • 1 bay leaf
  • ¼ cup cilantro, finely chopped
  • ¼ cup lime juice, freshly squeezed or store bought lime juice

How To Make 

Rinse your rice really well until clear water comes through. In your Instant Pot, add in your rice, bay leaf, and water.

Select “Rice” on your Instant Pot.

Make sure your sealing valve is closed.

When the time has completed, allow it to naturally release.

Once natural release is finished, open the lid on your Instant Pot. Remove bay leaf, and add in your cilantro, and lime juice. You can also add in a pinch of salt, if you like.

Mix. Serve and enjoy!

Ingredients

  • 2 cups white rice
  • 2 ½ cups water
  • 1 bay leaf
  • ¼ cup cilantro, finely chopped
  • ¼ cup lime juice, freshly squeezed or store bought lime juice

Instructions

In your Instant Pot, add in 2 cups of white rice, bay leaf, and water.

Select “Rice” on your Instant Pot. Make sure your lid is locked, and sealing valve is closed.

When the time has completed, allow it to naturally release.

Once natural release is finished, open the lid on your Instant Pot. Remove bay leaf, add in your cilantro, and lime juice. Mix. You can also add in a pinch of salt, if you wish.

Notes

  • Rinsing your rice before cooking will leave you with less sticky rice.
  • Toasting the rice in a skillet with a small amount of butter until lightly brown will give a deeper level of flavor. 
  • Garnish with fresh cilantro or diced green onions.
