I am ADDICTED to Cheez-its. I can really sit and eat a whole box by myself and not even realize it. It’s definitely not a budget friendly (or waistline friendly) addiction to have. Though, honestly…how can you say no to a yummy cheese cracker treat? I can’t help it…and I can’t say no. Then I had a lightbulb come on inside my little head! What if I can make

my OWN Cheez-its? DUH! Why didn’t I think of this before? I could have been saving so much money!  So, I immediately looked around the internet for recipes and saw I couple that I liked. Though, they were still missing something to make it super tasty. Then ANOTHER lightbulb came on! I know, so many lightbulbs in one day…how can I handle it? Well, here’s where the other lightbulb came into play. I love making home made macaroni and cheese, southern style of course. In that recipe, it calls for dry prepared mustard. WOOHOO! That was the missing link! Trust me! It’s super amazing…and yes…I ate it all…in one sitting! The best part of the recipe is that it’s super flexible to use with any cheeses that you want to use, and also you can let your creative juices flow! Besides making little square cheesy yummy crackers, I also made some cheese twills! I included a photo of it so you can you see what your mind can create. Homemade DIY Cheez-its Recipe

Homemade DIY Cheez-its Recipe
Prep Time 1 hour 10 minutes
Cook Time 12 minutes
Total Time 1 hour 22 minutes

Ingredients

  • 1 8oz bag of extra sharp shredded cheese
  • 1/2 stick of salted butter (cut into cubes)
  • 1 teaspoon of salt
  • 1 teaspoon of Dry prepared mustard
  • 1 cup of unbleached all purpose flour
  • 2 tablespoons ice water

Instructions

  • In a bowl for a kitchen aid mixer (or other mixer) with a paddle attachment, add all ingredients EXCEPT the water.
  • Mix on low speed for about 5 minutes, or until all ingredients are mixed well.
  • Slowly add in cold water. You might need a little extra water, but only because you don't want your dough to be dry or pebbly.
  • Take dough out of bowl and pat into a disk shape and wrap in plastic wrap and place in refrigerator for an hour.
  • Preheat oven to 375 Degrees F.
  • Divide dough into 4 pieces, and on a light floured surface start rolling out the dough until it's very very thing. Less than 1/8". You can use a pastry cutter, but I used a pizza cutter to make my square pieces and shapes. If you have small & fun cookie cutters then use them! Just makes them more fun to eat.
  • Transfer to a cookie sheet with a piece of parchment paper on it, I prefer a silpat.
  • Bake for about 10 - 12 minutes, or until puffed and edges are slightly browned.
  • Pull out of oven and allow to cool for a couple of minutes before transferring them to a cooling rack.
