HOW SHOULD I STORE CHRISTMAS TRUFFLES?

While these Christmas truffles can be enjoyed at rom temperature, it’s best that they be stored in an airtight container in the refrigerator when not served. They will last for up to 2 weeks in the fridge.

You can also freeze these Christmas truffles for up to 1-2 months and then allow them to soften slightly in the fridge before serving.

Keep in mind that the edible decorations such as chopped nuts and sprinkles may become soft through extended storage.

WHAT TYPE OF CHOCOLATE WORKS BEST FOR THESE CHRISTMAS TRUFFLES?

WHAT VARIATIONS CAN I MAKE TO THESE CHRISTMAS TRUFFLES?

  • Instead of chopped nuts, coat these Christmas truffles with bright holiday sprinkles, sanding sugar, or crushed candy canes. Finely chopped dried fruit such as cranberries would also be delicious.
  • Add a food flavoring to your holiday truffles such as almond extract, vanilla extract, or peppermint extract.
  • Melt some white chocolate melting wafers and add red and green food coloring to it. Drizzle the red and green chocolate over the set truffles for extra festive decoration!

TIPS FOR MAKING CHRISTMAS TRUFFLES

  • Make sure to finely chop the chocolate so that it melts quickly when combined with the hot cream.
  • When chilling the chocolate cream mixture in the fridge, cover the bowl with plastic wrap but ensure that the plastic wrap is touching the surface of the mixture so that no water from condensation in the fridge mixes into the chocolate cream mixture.
  • If the truffle mixture becomes too sticky while handling, pop it into the freezer for a few minutes and then continue. It’s important to work fast when rolling the truffle balls as the heat from your hands will make the mixture soft and sticky.

A regular teaspoon can be used to measure the truffle balls or you can use a small cookie scoop for uniform-sized truffle balls.

Ingredients

  • 150g (1cup) dark chocolate, chopped
  • 150g (1cup) milk chocolate, chopped
  • 150ml (1cup) heavy cream
  • cocoa powder, sprinkles, or chopped nuts, for coating
  • non-stick spray (for your hands when rolling truffles)

Instructions

  1. Put the dark and milk chocolate in a bowl, then put the cream in a pan and bring to a simmer. Pour the hot cream over the chocolate and stir until it melts. Leave to cool, then chill in the fridge for 7 hrs.
  2. Put the coatings into separate bowls. To shape the truffles, lightly rub your hands with a flavorless non-stick spray and roll teaspoons of the truffle mix between your palms – this can get messy!
  3. Gently roll the truffles in the bowl until evenly coated, then put in a box and chill. Store in the fridge in an airtight container for three days, or freeze for up to a month. Defrost in the fridge overnight.
