When you don’t have to stand over the stove or an oven all day trying to cook a delicious meal for your family, then that’s a winner in my cook. Cooking in the kitchen for long periods of time, especially in the summer heat, is not fun. Well, unless you’re making memories in the kitchen with your kids or other family members…then that’s different.

Can I Use Dark Meat Chicken For the Fajitas?

Yup, you totally can! However, I do recommend of caution to use skinless and boneless chicken thigh meat. This just makes the cooking process much easier. Can you use bone in? Yes, but it’s just extra work in making sure you don’t leave behind a chicken knuckle by by accident.

Crockpot Chicken Fajitas Recipe

Total Time 3 hours 10 minutes

Ingredients

  • 2 pounds boneless, skinless chicken breast, cut into one inch strips
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • One can of rotel with green chiles
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Pour half of the rotel into the slow cooker, spread evenly.
  • Add half of the red, green, and yellow bell peppers, spread evenly.
  • Add strips of chicken.
  • Add remaining ingredients including the remaining peppers and tomatoes.
  • Stir gently.
  • Cover and cook on low for 3 hours or high for 1.5 hours.
  • Use a slotted spoon to scoop fajita mixture into tortillas.
  • Top with cheese and any other condiments of your choice.
