Cosmic Brownie Cookies are inspired by the Little Debbie’s Cosmic Brownies that many of us grew up to love! They’re soft and chewy with a dense texture, topped with rich chocolate ganache and Cosmic candy sprinkles.

These rich and decadent Cosmic brownie cookies will bring back childhood memories of the classic Little Debbie’s Cosmic brownies with chocolate ganache and colorful rainbow chips.

Much like a classic brownie, these cookies are denser in texture than regular cookies. They’re irresistible treats that can be enjoyed with a glass of milk or with ice cream.

Cookie batter – This brownie cookie batter consists of standard ingredients, such as flour, unsweetened dark cocoa powder, cornstarch, baking soda, salt, melted butter, white sugar, brown sugar, vanilla extract, and eggs.
Chocolate frosting – This consists of heavy cream and semi-sweet chocolate chips.
Decoration – Use Cosmic candy sprinkles or colorful jimmies.

Swaps

Cocoa powder – I use unsweetened dark cocoa powder for these cosmic brownie cookies since they are already quite sweet, but you could use sweetened cocoa powder instead. The dark cocoa powder also intensifies the chocolate flavor in these cookies, but you can also use other varieties of cocoa powder.
Chocolate chips – Dark chocolate chips can be used instead of semi-sweet.
Sprinkles – If you can’t find the cosmic brownie sprinkles, use rainbow sprinkles instead.
Flour – Use Bob’s Red Mill gluten-free flour instead of all-purpose flour if you need these cosmic brownie cookies to be gluten-free.

🥣 EQUIPMENT

🔪 HOW TO MAKE

The Cosmic brownie cookies follow the same baking process as any other cookie recipe. Once baked and cooled, the chocolate brownie cookies are decorated with creamy chocolate frosting and topped with cosmic brownie sprinkles. Follow these easy steps to make this childhood favorite treat!

Preparations

Preheat the oven to 350 degrees F and line two baking sheets with parchment paper. Set aside.

Cooking Instructions

Step 1
Whisk together the flour, baking soda, cornstarch, dark cocoa powder, and salt in a medium mixing bowl. Set aside.

In a separate large mixing bowl, beat together the melted butter, white sugar, brown sugar, and vanilla extract until well combined.

Step 2
Add the eggs and beat the mixture on a low speed until just incorporated.

Step 3
Pour the dry ingredients into the bowl of wet ingredients and mix on a low speed until combined.

Step 4
Roll the cookie dough into 1-inch balls and place them on the prepared baking sheets to chill in the fridge for 30 minutes. Once chilled, bake the cookies for 10 minutes.

Allow the cookies to first cool for 5 minutes on the cookie sheets and then transfer them to a wire rack to cool completely.

Step 5
Add the heavy cream and chocolate chips to a microwave-safe bowl and heat for 30 seconds on high. Stir the mixture well and then heat for another 20-30 seconds until the chocolate is melted. Stir the chocolate frosting until it is smooth.

Step 6
Spoon the chocolate frosting onto the center of each cookie and spread it out towards the edges. Top each cookie with the Cosmic brownie sprinkles and allow to set slightly before serving.

💭 COOKING TIPS

These Cosmic brownie cookies are made with melted. It’s important to chill the cookie dough balls before baking the cookies so that they don’t spread too much.

Create uniform-sized cookies by using a medium cookie scoop to scoop out the dough.

It’s easier to form the cookie dough balls and then chill the dough than chilling the cookie dough mixture and then trying to scoop out the dough.

Allow the cookies to cool completely before you add the chocolate frosting or it will become a runny mess.

Cosmic Brownie Cookies are a fun childhood throwback! Inspired by Little Debbie's Cosmic Brownies, these cookies are soft and chewy with a dense texture, topped with rich chocolate ganache and Cosmic candy sprinkles.

Ingredients

  • 1 2/3 cups all-purpose flour
  • 1 cup unsweetened dark cocoa powder
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup butter, melted
  • 1 ¼ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 large eggs

Topping:

  • 8 ounces semi-sweet chocolate chips
  • ¾ cup heavy cream
  • Cosmic brownie sprinkles, or colorful jimmies

Instructions

  1. In a medium mixing bowl, whisk together the flour, dark cocoa powder, cornstarch, baking soda, and salt; set aside.
  2. In a large mixing bowl, use an electric mixer to beat together the melted butter, granulated sugar, brown sugar, and vanilla until well combined.
  3. Add the eggs and beat on low speed, just until incorporated.
  4. Pour the dry mixture into the wet and mix on low speed until combined.
  5. Line baking sheets with parchment paper. Roll the dough into 1-inch balls and place on the baking sheets, leaving 2 inches of space between each dough ball.
  6. Place the cookie sheets of dough balls in the refrigerator to chill for 30 minutes.
  7. While the dough is chilling, preheat the oven to 350F.
  8. Once the doughballs are finished chilling, bake at 350F for 9-10 minutes until set around the edges. Remove from the oven and cool on the cookie sheets for 5 minutes then transfer to wire cooling racks.
  9. Pour the semi-sweet chocolate chips and heavy cream into a microwave safe bowl and heat on high for 30 seconds. Stir well, then heat for another 20-30 seconds until the chocolate is melted. Continue to stir until fully combined and smooth.
  10. Spoon the chocolate frosting onto the center of each cookie and spread out towards the edges.
  11. Sprinkle each cookie with Cosmic Brownie sprinkled.
