One of my favorite ways to sneak vegetables into Angela’s diet without a huge fuss is to hide them in something that tastes delicious. And, this cauliflower mac and cheese is perfect for that. It tastes just like traditional mac and cheese but without the carbs from the pasta. As an added bonus it is loaded down with vegetables.
What I love even more is that it’s gluten free, so you can enjoy every last bite of this dish!
Frequently Asked Questions About Cauliflower Mac and Cheese
Can I leave out the hot sauce?
Yes you can surely leave out the hot sauce. Though, there is not enough hot sauce to make your mac and cheese spicy. The hot sauce brings an amazing flavor to your mac and cheese. If you want a spicy mac and cheese feel free to add more hot sauce.
Can I use frozen cauliflower?
Yes and no. You can use frozen cauliflower; however, you will just have to bake it a little bit longer in the oven. Frozen cauliflower is “flash frozen”, so it will have a little extra water retention. If you really want to save time you can purchase the bags of pre chopped fresh cauliflower that you can find in the produce department of your local grocery store.
How can I prevent my cheese sauce from being grainy or gritty?
Have you ever made a homemade cheese cause for your mac and cheese and it turned out grainy. I have a few tips to help you get the cheese sauce smooth. Always grate your own cheese. Already shredded cheese is coated in an anti caking agent when can make your cheese sauce gritty. Add your cheese to your sauce a little at a time to get a smooth consistency.
Can I freeze Cauliflower Mac and Cheese?
Well technically you can freeze cauliflower mac and cheese. However, I will be honest with you it doesn’t freeze well. Once thawed your mac and cheese will have a mushy and watery texture and therefore it is best eaten fresh.
Cauliflower Mac and Cheese Recipe
2 heads of cauliflower, cut to florets
2 tablespoons olive oil
1 tablespoons butter
Salt & Pepper to taste
1 cup heavy cream
6 oz cream cheese
4 cups cheddar cheese, shredded
2 cups mozzarella cheese, shredded
1 tablespoon hot sauce – your favorite brand
Topping:
¼ cup parmesan cheese
1 tablespoon olive oil
2 tablespoons parsley – fresh or dry
How To Make
Preheat oven to 400 degrees
Toss cauliflower with 2 tablespoons olive oil and salt & pepper
Roast in oven until golden brown
In a small bowl, combine topping ingredients and set aside
In a large pot bring heavy cream to a simmer over medium heat
Reduce to low and stir in cheeses, hot sauce, and salt & pepper
Fold in roasted cauliflower until well combined
Pour cauliflower mixture into a buttered baking dish, sprinkle on the topping mixture, and bake for 15-20 minutes until bubbly, then broil for just a few minutes to brown and crisp the top
Garnish with parsley, serve and enjoy!
