“David, can I just use frozen mango?” Look, I’m all for a shortcut. You can, but you have to thaw it completely and pat it dry with a paper towel. Frozen mango releases a lot of water, and nobody wants “Mango Soup.” Fresh is 100% better here, but I won't tell the Kitchen Police if you use frozen.

“How long does this actually stay good?” In my house? About 20 minutes. In the real world, it’ll stay fresh for 2–3 days in an airtight container. The lime juice will start to soften the mango over time, so eat it sooner rather than later.

“Can I freeze it?” Hard no. The texture completely changes and it’s just not worth it. Fresh is king.

Step 2: The Creaming Process

In a large mixing bowl (or a stand mixer), beat your softened butter, brown sugar, and granulated sugar together on medium-high for at least 2–3 minutes. You are looking for a pale, fluffy texture. This step isn't just about mixing; it’s about aerating the butter, which provides the “lift” and keeps the cookies from being dense.

Step 3: Incorporate the Bind and Flavor

Ingredients

Cookie Dough

  • 1 stick of unsalted butter at room temp
  • 1/2 cup of granulated sugar
  • 1/4 cup of brown sugar
  • 1 egg
  • 2 teaspoons of vanilla extract
  • 1 1/2 cups of flour
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt

Apple Mixture

  • 1/4 cup of sugar
  • 1 large apple of your choice
  • 4 tablespoon of brown sugar
  • 2 tablespoon of butter
  • 1 teaspoon of cinnamon
  • 1/4 cup of water
  • 1 tablespoon of cornstarch

Instructions

  • In a large bowl add the 1 stick of room temp butter, 1/2 cup of sugar and 1/4 cup of brown sugar and mix together using a hand mixer, until it turns fluffy and creamy. Add the egg and vanilla extract and mix again.
  • Add the flour, cinnamon, baking powder and salt and mix again until a cookie dough forms. Cover the bowl and place in the fridge for 1 hour. Around 10-15 minutes before you take the dough out begin making the apple filling.
  • Chop the apples all up into tiny pieces and make sure the skin is off. In a small saucepan over medium to low heat add the apples, butter, cinnamon and brown sugar and stir until the mixture is melted and starts bubbling.
  •  Combine the water and cornstarch together and stir. Pour that into the saucepan and stir and let simmer for 5 minutes on a medium heat until the mixture becomes thick. After the 5 minutes is up turn off the heat and let the mixture cool for 5-10 minutes. 
  • While the apples are cooling roll out the cookie dough balls. Add 1/4 cup of sugar to a small bowl and set aside. Line a large baking sheet with parchment paper and set aside. Roll out 9 even balls of dough and roll each one into the bowl of sugar, coating the entire thing in sugar. Place on the baking sheet.
  • Flatten the cookie some with your hand and make a big indent with your finger in the middle of the cookie for the apples to sit in. Add the apple mixture into the middle of the cookie, about 1 tbsp.
  •  Add to the preheated oven and bake for 14 minutes. Remove from oven and let cool completely. Drizzle the caramel all over top of the cookies and sprinkle just a bit of brown sugar on top! Enjoy!

FRIDGE

Store these apple spiced cookies in an airtight container for 1-2 days in the fridge. The apple filling will soften the cookies, so they are best enjoyed the same day of baking.

FREEZER

FAQ: Solving Your Cookie Concerns

Why are my cookies flat and thin?

This usually happens if the butter was too melted (oily) rather than softened, or if the apples weren't dried properly. The extra moisture from “wet” apples thins out the dough in the heat of the oven, causing it to spread.

Can I use applesauce instead of fresh apples?

I wouldn't recommend it for this specific recipe. Applesauce adds a lot of moisture but no texture. If you want a soft, cake-like cookie, applesauce works, but for an old-fashioned “spiced cookie,” fresh diced fruit is the way to go.

Do I need to peel the apples?

It’s a personal preference, but I recommend peeling them. Apple skins can become tough or “stringy” when baked inside a cookie, which can be a bit distracting from the soft crumb.

How long do these stay fresh?

Because of the fresh fruit, these have a slightly shorter shelf life than a standard chocolate chip cookie. They are best within 2-3 days. If you need them to last longer, you can freeze the baked cookies for up to a month!

INGREDIENT NOTES

  • Cranberries – I've used fresh cranberries for this salsa, although you could use frozen and thawed cranberries instead.  
  • Sugar – White granulated sugar melts the best for making this fruity salsa and adds a good amount of sweetness to offset the tart notes of the cranberries and the spicy heat of the jalapeno.
  • Green onions – Thinly sliced, both the green and white parts.
  • Jalapeno – Adds a delicious kick of heat to the salsa to balance all the flavors but won't be overpowering. Make sure to deseed the jalapeno or you will end up with a spicier salsa.
  • Cilantro – Adds a brightness and freshness to the salsa.
  • Lime juice – The acidity from the lime juice helps to cut through the sweetness.
  • Salt – Great for enhancing flavors. Got sea salt? Use it instead of regular salt to season the salsa for some extra depth of flavor.
  • Sour cream – Helps to thicken the salsa and provides a delicious tangy flavor.
  • Cream cheese – Use this as a spread for whatever base you decide to use, such as crackers or slices of bread.

FRESH VERSUS FROZEN CRANBERRIES

While this recipe calls for the use of fresh cranberries, you can actually make use of frozen cranberries if you aren’t able to source the fresh variety.

For frozen cranberries, it's best to wait for them to thaw. Place the frozen cranberries in a colander, and allow them to thaw and drain at the same time. You don't want this salsa to have extra liquid because it will distract from the flavors!

Most fruits, like cranberries, will naturally release juices. That's totally okay! Just be sure to stir so the flavors can be mixed around evenly.

TIPS FOR MAKING MY CRANBERRY JALAPENO SALSA

  • I highly recommend that you chill the cranberry salsa in the fridge as directed in the recipe, as this will allow all the flavors to meld together and the spice from the jalapeños to intensify. The wait is worth it!
  • Younger jalapeños with smoother skin are typically milder than older ones with wrinkly skin. This is good to know when deciding how spicy you want the salsa to be. 
  • Use gloves when deseeding jalapenos to avoid skin irritation.
  • Easily adjust the spice level in this salsa recipe by either omitting the jalapenos and using green bell pepper instead, keeping the seeds in the jalapenos, or even using a spicier pepper, such as serranos!
  • Chopping all the ingredients finely is the key to getting the flavors and textures right. It might be time consuming, but it can really make a huge difference. You can always use the food processor to chop all the ingredients into the perfect size.
  • Not a fan of cilantro? You can make do with mint leaves instead. Not only does it lend a nice pop of color and freshness, but also lends a little zing to the base flavors of the salsa.
  • Got a few extra minutes? Grill the jalapeno peppers in a pan until they develop a slight char, allow them to cool down and then use them for the recipe. This will lend a bit of smokiness to the salsa and really take the flavors to the next level.

Refrigeration Instructions

Since this salsa needs to be chilled in the fridge for a few hours before being served, it automatically makes it a great recipe to make ahead of your parties.

Ingredients

  • 1 ½ c cranberries
  • ½ c sugar
  • 3 green onions
  • 1 jalapeno
  • 1 c cilantro
  • 1 Tbsp lime juice
  • ¼ tsp salt
  • ¼ c sour cream
  • 1 8 oz block cream cheese

Instructions

  • In a food processor place all the cranberries and pulse until you get a coarse chop. You don’t want to puree the berries. Place in a bowl and add the sugar and stir
  • Slice the green onions, both green and white parts into thin slices and add to the cranberries.
  • Cut off the stem and hollow out the seeds of the jalapeno and chop into small pieces and add to the mixture.
  • Remove the larger stems from the cilantro and rough chop into small pieces and add to the bowl.
  • Cut the lime and squeeze about a tablespoon of juice and add it along with the salt and sour cream. Give everything a really good mix, cover and refrigerate for about 3-4 hours.
  • Choose whatever you are serving alongside the salsa, i.e., bread/crackers and spread a layer of cream cheese for the base. Using a fork, scoop up the salsa to allow the juice to drain before piling it on top! Garnish with extra cilantro or green onions.

I don't know about you, but I love sweet breakfasts! This Air Fryer French Toast isn't overly sweet at all for those with more of a savory tooth, although you do have the option to slather each slice of toast in maple syrup, a sprinkling of powdered sugar, and your favorite slice fruit.

🌟 WHY I LOVE AIR FRYER FRENCH TOAST

It’s an incredibly easy breakfast recipe that you can make in just a total of 15 minutes from start to finish. 

This air fryer French toast calls for pantry-staple ingredients that you likely already have at home!

Making French toast in the air fryer creates a perfect crispy outer texture while retaining the soft and fluffy bread center. It’s also a great alternative to pan-frying in oil and reduces cleanup.

🍽 KEY INGREDIENTS

Eggs – You need about 1 egg for every 2 slices of bread.

You'll need an air fryer, non-stick cooking spray or disposable air fryer liner, a whisk, and a small bowl.

🔪 HOW TO MAKE

Air fryer French toast is soft and fluffy with an irresistible crispy outer crust. Using the air fryer to make French toast reduces the mess and hassle so that you can enjoy this breakfast comfort food in just 15 minutes. Here are the simple steps to make air fryer French toast:

Preparations

Preheat the air fryer to 360° F.

Cooking Instructions

Step 1
Combine the eggs, milk, spices, and extract in a small mixing bowl with a whisk until well combined.

Step 2
Once the air fryer has preheated, spray the basket with non-stick cooking spray or add a disposable liner. 

Dip one piece of bread into the egg mixture and then let the excess of the mixture drip off.

Step 3
As the bread slices have been dipped and coated fully in the egg mixture, transfer them to the air fryer basket.

Step 4
You may be able to fit 2-3 slices of bread at a time in the air fryer basket, but this will depend on the size of your air fryer. Air fry the bread on one side for 6 minutes.

Step 5
After 6 minutes, flip each slice of bread over and air fry for another 4-6 minutes, or until the batter has cooked and the bread is golden brown and crispy. Repeat this for all of the slices.

Transfer the air fryer French toast to a plate and serve with your favorite toppings and syrup or honey.

💭 COOKING TIPS

  1. Do not overcrowd the air fryer basket. The slices of bread must be placed in a single layer. You may need to cook your air fryer French toast in batches. 
  2. It’s important to use non-stick spray or the disposable air fryer liners to prevent the wet batter from sticking and burning in the air fryer. 
  3. The bread slices only need to be soaked for a short time to prevent them from becoming overly soggy. 
  4. It’s normal for the first slice of bread to absorb a large amount of the spices in the egg mixture. Feel free to add in more spices as you go along. 
  5. Since all air fryers heat and cook at different rates (similar to regular ovens), I recommend that you check on the slices after the first flip after about 2-3 minutes.

🙋 FREQUENTLY ASKED QUESTIONS

WHAT IS THE RIGHT RATIO OF EGGS TO MILK FOR FRENCH TOAST?

This depends on the recipe, but most recipes call for one egg for every two slices of bread and about ¼ cup of liquid for every one egg used. You’ll see that I’ve used 3 eggs for 6 slices of bread but reduced the ratio of liquid to avoid soggy pieces of bread. 

WHY IS MY FRENCH TOAST NOT CRISPING?

This is almost always a result of overly soggy slices of bread. While the bread should be coated evenly with the egg custard mixture, they shouldn’t be soaked for a lengthy time. Don’t use too much milk in your egg mixture. 

CAN I MAKE GLUTEN-FREE AIR FRYER FRENCH TOAST?

Absolutely! Simply use gluten-free bread that is thick instead of regular bread.

🧊 STORING AND ♨ REHEATING

FRIDGE

Store leftover air fryer French toast in an airtight container without any fresh toppings or syrup in the fridge for up to 3 days.

FREEZER

Allow the slices of air fryer French toast to cool completely and then transfer them to a sealable plastic bag to store in the freezer for up to 2 months. Thaw overnight in the fridge and reheat to serve with fresh toppings.

REHEAT

Reheat leftover slices of air fryer French toast in the air fryer for 3-5 minutes at 300 degrees F, flipping it over halfway to ensure an even heating on both sides. This will also help to add back some of the crispy texture lost from storage. 

Alternatively, reheat the leftover slices of French toast in the microwave for 30 seconds.

Ingredients

  • Spray the air fryer basket with a non-stick cooking spray or line it with a disposable air fryer liner. Set aside.
  • In a small bowl, combine the eggs, milk, spices, and vanilla extract. Whisk together until well combined.
  • Dip one piece of bread into the egg mixture, let the excess drip off, and then place the coated bread into the air fryer basket. Depending on the size of your air fryer, you may only be able to fit 2-3 pieces, so you’ll have to work in batches.

Notes

  • Make sure to use air fryer liners or to grease the air frying basket before using otherwise the bread will stick to the basket.
  • Use a thick bread such as thick sliced Brioche, Texas Toast, or Sourdough.
  • Quickly soak the bread but don’t leave it in the batter too long otherwise it may become soggy.
  • This recipe does not add sugar into the batter, but if you prefer it sweet, you can do so. The added maple sugar adds enough sweetness.
  • The first dipped bread usually takes up a lot of the spices, feel free to sprinkle additional spices directly onto the bread after dipping.
  • All air fryers will heat differently so after you flip it the first time, be sure to check it half way through the second heating time.
  • STORING: The good thing about air fryer recipes is that they are small batch! You shouldn’t have much leftovers. It’s best eaten fresh, but if there’s any you would like to save, you can store it in an airtight container in the refrigerator (without fruit and maple syrup). Simply reheat for 30 seconds in the microwave when ready to enjoy again.

This Mini Pancakes Recipe turns regular pancakes into a plate of cute bite-sized breakfast pancakes, made with butter and buttermilk for extra flavor, and topped with a choice of fresh fruit, powdered sugar, and a drizzle of maple syrup!

Why settle for ordinary pancakes when you can make these adorable mini pancakes? Like my Valentines Pancake Recipe, this mini pancakes recipe offers a fun twist to regular pancakes.  They’re thick and fluffy, and easy to skewer onto your fork in one go! 

They aren’t overly sweet – making them perfect to pair with maple syrup, honey, freshly sliced fruit, and powdered sugar.

The pancake batter for these mini pancakes is no different to regular pancake batter. If you’ve made pancakes from scratch before, this is going to be an absolute breeze, and if you haven’t, I’ve provided fail-proof steps that guarantee a scrumptious result!

Easily adapt this recipe with various ingredient swaps or add-ins to suit your dietary and taste preferences. 

These mini pancakes can be enjoyed for breakfast, brunch, or even a “breakfast dinner”!

🍽 KEY INGREDIENTS

Dry ingredients – Combine all-purpose flour, granulated sugar, baking powder, and salt. 

Wet ingredients – This consists of melted butter, buttermilk, vanilla extract, and egg.

Recommended toppings – Freshly sliced fruit, maple syrup, and powdered sugar.

Swaps

Flour – Use Bob’s Red Mill flour for gluten-free pancakes. 
Butter – I usually use unsalted butter in recipes. If you use salted butter, make sure to omit the salt from the list of ingredients. Oil, such as vegetable oil, canola oil, or coconut oil, can also be used instead of butter. 
Buttermilk – If you don’t have buttermilk, combine 1 cup of milk with 1 tablespoon of lemon juice or white vinegar for every cup of buttermilk required. Low-fat buttermilk will also work for this pancake recipe.

You’ll need a large non-stick skillet or griddle, two mixing bowls, whisk or spoon, and spatula.

🔪 HOW TO MAKE

Ditch the packaged pancake mix! These mini pancakes are so easy to make with standard pancake ingredients, a hot skillet, and your favorite pancake toppings. Follow these simple steps to enjoy a plate of thick and fluffy pancakes in just 10 minutes!

Preparations

Melt the butter and allow it to cool. Let other ingredients such as the egg reach room temperature.

Cooking Instructions

Step 1
Combine the dry ingredients in a mixing bowl, and set aside.

Combine the wet ingredients in a separate mixing bowl.

Mix until just incorporated, but don’t overmix the batter.

Step 5
Melt some butter in a large non-stick skillet or griddle over medium-low heat to coat it. Once hot, drop 1 tablespoon of batter per mini pancake into the pan, making sure that there is enough space between each pancake so they don’t touch. You should be able to fit 5-7 pancakes at a time, depending on the size of the pan used. 

Cook the pancakes for 2-3 minutes or until the tops start to bubble. Once bubbling, use a spatula to flip the pancakes and allow them to cook on the other side for another minute or until the bottom turns a light brown. 

Once cooked, transfer the mini pancakes to a plate and cover to keep them warm while you continue to cook more.

💭 COOKING TIPS

It’s important to allow the melted butter to cool before mixing it with the other ingredients, otherwise it can start cooking ingredients in the mixing bowl. 

Never overmix the pancake batter. For thick and fluffy pancakes, mix the ingredients until just incorporated, even if a few flour streaks remain. 

Mini pancakes cook at a much faster rate than regular pancakes. Check on them often and reduce the heat to low if required.

📖 RECIPE VARIATIONS

These mini pancakes are not overly sweet as they are intended to be served with maple syrup. You can easily adjust the amount of sugar for sweeter-tasting pancakes, if you wish.   

For added convenience, use a box pancake mix and add the additional ingredients called for on the box. 

Add a touch of decadence to these pancakes by folding in some chocolate chips into the batter.  

Add warmth to the pancake batter by mixing some ground cinnamon into the dry ingredients. 

🥗 WHAT TO SERVE WITH MINI PANCAKES

You can have a lot of fun mixing things up by serving these mini pancakes with different toppings, depending on whether you are serving them for breakfast, brunch, or as a breakfast-inspired dinner.

These mini pancakes are great topped with fresh fruit, a sprinkle of powdered sugar, or a drizzle of maple syrup.

For added decadence, you could also serve these mini pancakes with salted caramel sauce, chocolate sauce, whipped cream, a scoop of ice cream, or a sprinkle of chopped nuts.

🙋 FREQUENTLY ASKED QUESTIONS

IS IT BETTER TO COOK PANCAKES WITH BUTTER OR OIL?

You can make pancakes with butter or oil, depending on your preference. That said, the butter does add delicious flavor to the pancake batter.

SHOULD PANCAKE BATTER BE THICK OR THIN?

Pancake batter should be thick enough to coat the back of a spoon but still be pourable. The batter shouldn’t be watery or thin as the pancakes will spread too much while cooking in the pan.

WHAT TYPE OF FLOUR IS BEST FOR PANCAKES?

All-purpose flour, whole wheat flour, or a combination is good. When making pancake batter from scratch instead of using pancake mix, be sure to add baking powder so that the pancakes become fluffy. 

CAN I MAKE THE PANCAKE BATTER AHEAD OF TIME?

I don’t recommend this as it can lead to the batter becoming flat and dense and your pancakes will not turn out fluffy.

Store leftover mini pancakes in an airtight container in the fridge for 3-5 days. They are best stored without any toppings since these can turn them soggy.

FREEZER

You can also freeze these mini pancakes once they have cooled completely. Place sheets of parchment paper between the pancakes when stacking them so that they don’t stick together once frozen. They can be stored in an airtight container or a Ziploc bag. Thaw on the countertop or overnight in the fridge. 

REHEAT

Reheat leftover mini pancakes in the microwave. Place them on a plate and reheat in 10-second increments until heated through.

Ingredients

  • 1 ½ cups all-purpose flour
  • 3 tablespoons granulated sugar

  • 1.In a medium bowl, combine the all-purpose flour, sugar, baking powder, and salt.
    2.In another bowl, combine the buttermilk, melted and cooled butter, vanilla extract, and egg. Whisk together until egg is incorporated.
    3.Make the batter by combining the wet and dry ingredients together. Mix until just incorporated. Do not overmix.
    4.Heat a large non-stick skillet or griddle over medium-low heat and melt a little butter to coat the pan. Once the skillet is hot, drop 1 tablespoonful of batter for each mini pancake onto the pan. Make sure to space them out enough so they don’t stick to each other. You should be able to fit 5-7 pancakes depending on the size pan you use.
    5.Cook for 2-3 minutes, or just until the tops begin to bubble. Then use a spatula to flip the mini pancakes over and cook the other side for an additional 1 minute, until the bottom lightly browns.
    6.Transfer to a plate and cover to keep warm. Repeat with the rest of the pancake batter.
    7.Serve with fresh fruit, powdered sugar, and a little maple syrup. Enjoy!

Notes

When you melt the butter for the batter, make sure it cools down before mixing it in with the other ingredients. You don’t want it to start the cooking process in the mixing bowl.
Do not overmix the batter as it will change the consistency of your pancakes. To keep it thick and fluffy, mix until the ingredients are just incorporated. A few streaks of flour in the batter are ok.
The pancakes are not very sweet at all as they will be served with maple syrup. You can alter the sugar to your liking or omit it entirely.
Low-fat buttermilk will work in this recipe.
Cook on a medium-low heat. Mini pancakes will cook much quicker than regular sized pancakes. Check on it often and lower the heat a little if you need to.
This recipe will also work to make regular sized pancakes. It should make about 6-8 large pancakes. You may have to alter the cooking times but you should still cook on a medium-low heat and flip it over once the tops begin to bubble. Cook the other side for an additional 1-2 minutes until lightly browned.
