Stop Throwing Away Your Bread Crusts! (Easy Air Fryer Breadcrumbs)
If you have kids, a big family, or—heaven forbid—someone who insists on cutting the crusts off their sandwiches, you probably have a bag of “bread scraps” haunting your fridge. Stop throwing them away!
I’m all about a “Zero Waste” win in my Bristol kitchen. Between being a full-time caretaker and keeping the site running, I don't have time for complicated pantry staples. These Air Fryer Breadcrumbs take 7 minutes, use up those leftover end-slices, and taste 100x better than that dusty canister you bought three years ago. Plus, it’s a great way to clear out the freezer.

Recipe Snapshot
- Zero Waste Kitchen Win: These air fryer breadcrumbs are a simple way to use up leftover bread, crusts, or slightly stale slices instead of tossing them out.
- Quick Homemade Upgrade: Homemade breadcrumbs taste fresher and crispier than store-bought versions, and the air fryer gets them perfectly toasted in just minutes.
- Easy to Customize: Keep them plain for flexible cooking or add garlic powder, Italian seasoning, parmesan, or herbs to match whatever recipe you’re making.
- Best For: Chicken cutlets, casseroles, meatballs, crispy toppings, breading vegetables, and stocking your freezer with homemade kitchen staples.
David’s Tip: Let the toasted bread cool completely before blending. Warm bread still holds steam, which can create softer breadcrumbs instead of that dry, crispy texture you want for coating and crunch.

Why This Recipe Works

What Kind of Bread? (Spoiler: All of them.)
I usually use standard white bread slices, but this is the ultimate “clean out the pantry” recipe.
- Sourdough: Makes for a tangy, gourmet crumb.
- Brioche: A little sweet, perfect for topping a [dessert casserole].
- Gluten-Free: Finally, GF breadcrumbs that don't cost $9 a bag. Just use your favorite GF loaf!
- The “Sandwich Scrap” Special: Save the crusts from your kids' lunches in a freezer bag. When the bag is full, it's breadcrumb day.
The 7-Minute Method

Storage& Freezer Tips
- Re-crisp: If they soften, a quick air fry brings the crunch back.
- Pantry: Airtight up to 2 weeks once fully cooled and dry.
- Fridge: Up to 1 month if you added parmesan or butter.
- Freeze: Up to 3 months. Freeze flat in bags and pull what you need.
David's Flavor Variations
- Italian seasoned: Add Italian seasoning, extra garlic powder, and a pinch of parsley.
- Parmesan herb: Stir in finely grated parmesan after toasting so it does not scorch.
- Lemon pepper: Lemon zest, cracked pepper, and a pinch of garlic powder.
- Spicy pangrattato: Red pepper flakes and a little smoked paprika.
- Garlic butter crumbs: Melt butter with a smashed garlic clove, strain, and toss while warm.
- Gluten-free: Use your favorite GF loaf. Texture toasts up beautifully.

Air Fryer Breadcrumbs
Ingredients
- 4 slices white bread
- 1 tsp smoked paprika
- 1 tsp dried thyme
Instructions
- Cut slices of white bread into inch squares. No need to cut off the crust of the bread.
- Transfer the bread to the air fryer basket and roast at 340F for 6-7 minutes. After 5 minutes, you can check the bread to prevent burning.
- Place the toasted bread slices in a blender.
- Add smoked paprika and dried thyme to the blender as well. You can use other spices and herbs. Close the lid and grind in pulses of 10-15 seconds. After each pulse, check how finely crushed the crackers are.
- If you want to get a smaller crumb, grind the crackers longer.
- Transfer the finished breadcrumbs to a jar or container, tightly close the lid and use if necessary. To keep the crackers from getting damp, you can store them in the refrigerator. Can be used for breading fish, meat, appetizers, seafood, as well as for casseroles, minced meat and other dishes.

Let us know how it was!FAQ: The Real Talk
“Can I use fresh bread?“
You can, but it takes longer to dry out. If your bread is super fresh, give it an extra 2 minutes in the air fryer at a lower temp (300°F) before you do the final toast.
“How do I store these?”
Keep them in an airtight jar in the pantry for up to 2 weeks. If you added cheese or butter, put them in the fridge!
“What if they get soft?”
Humidity is the enemy of the crumb. If they lose their “snap,” just toss them back in the air fryer for 60 seconds. Good as new.
