2 garlic cloves, finely chopped

1 tsp powdered star anise

1 tbsp dark soy sauce

2 tbsp vegetable oil

1 bunch scallions, halved lengthways

1 tbsp dark soy sauce

2 tsp cornstarch

Directions:

  1. Cut the steak into thin strips and place in a shallow dish.

  4. Add the beef to the wok, together with the marinade, and stir-fry for 3-4 minutes. Return the scallions to the wok and add the additional soy sauce, sherry, chili sauce, and 2/3 of the water.
  5. Blend the cornstarch to a paste with the remaining water and stir into the wok. Bring to a boil, stirring until the sauce thickens and clears.
  6. Transfer to a warm serving dish and top with scallion tassels and some sesame seeds (UNLESS ALLERGIC) and serve immediately.
