 With chilly weather on the horizon , it seems like a good time to start thinking about soups and chilis. I don’t know about you, but one the very first cold snap, I break out my Instant Pot to make some hearty and comforting soup and chili.

This time around, I decided to make a classic Italian soup: Zuppa Toscana. This creamy kale and sausage soup has been a break-out star on the web lately. The popularity makes sense – it’s easy to see why so many people rave about it.

I have to say that this probably is the best Instant Pot soup recipe I’ve come across yet. It was easy to assemble, and it took little effort on my part to get an incredibly flavorful result. Angela still loved this soup even though it had spinach in it, which is very surprising if you ask me.

Can I use a different type of sausage? 

Yes, you can. The options are open when it comes to selecting the sausage for your Instant Pot Zuppa Toscana soup. I used mild Italian sausage, but you can use spicy sausage or even sweet sausage. If you want to lower the fat or WW points in this recipe, you can use turkey sausage to lower the fat.

Can I add more potatoes to this soup?

I don’t like Spinach, can I leave it out? 

Yes! You can leave out anything that you do not like or you can switch out the spinach for kale. I like to use spinach because my family prefers spinach over kale, but if you want to get extra fancy you can even use swiss chard for the greens.

Can I leave out the cream in this recipe?  

No, I would not recommend leaving out the cream because it does bring a richness to the Instant Pot Zuppa Toscana soup. If you are unable to have dairy or want an extra rich version you can try using coconut milk instead of heavy cream for this recipe.

Can I make this in my crock pot

 Yes, you can slow cook this soup in your crock pot. I would recommend browning the sausage and then placing it into your crock pot with all of the other ingredients. You will want to let it slow cook for 4-6 hours on low heat or until the potatoes are soft.

Can I freeze this Instant Pot Zuppa Toscana soup?

Sadly, this soup doesn’t freeze well. When freezing this soup the potatoes tend to get mushy. Also, because this soup contains cream it’s not really a good idea to freeze this soup.

How long can I store this soup in the fridge

You can store this soup for about three to four days in the fridge. That makes this soup a great meal prep item!

Olive Garden Copycat Instant Pot Zuppa Toscana Ingredients

Italian Sausage: pork sausage that is made with fennel seed or anise. It packs a ton of flavor, and can be seasoned with fresh or dry herbs. This makes a very flavorful meat for your soup.

Greens: Greens are extremely nutrient-rich vegetables. They contain high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron, and calcium. I love using them to add a vitamin and nutrient pack to my soups.

Oregano: Oregano means the Mountain in Ancient Greek. Oregano leaves has a peppery and slightly bitter taste.

How To Make 

Press the Sauté button on Instant Pot. Once heated, add olive oil and sausage. Cook sausage until browned.

Add onion, garlic, and potatoes. Cook for 3 minutes.

Add in chicken broth, oregano, salt and pepper. Close and lock the lid, and set the vent to the sealing position on the lid. Cook on High Manual Pressure for 5 minutes.

Once done, Quick release pressure. Stir in cream and baby spinach. Serve once spinach has wilted.

Ingredients

  • 1 pound Mild Italian ground sausage
  • 1 tbsp olive oil
  • 3 cups chopped kale or spinach
  • 1 white onion, diced
  • 3 cloves garlic, minced
  • 2 Russet potatoes, cubed in chunks (skin on)
  • 1 teaspoon oregano
  • 2 tsp sea salt
  • 1 tsp cracked pepper
  • 1 cup cream
  • 6 cups chicken broth

Instructions

  1. Press Sauté button on Instant Pot. Once heated, add olive oil and sausage. Cook sausage until browned.
  2. Add onion, garlic, and potatoes. Cook for 3 minutes.

Notes

  • You can easily add an extra potato, and you will not have to add extra time.
