Chicken Flatbread “Pizza” Recipe

Everyone is always in need of a quick and easy meal that we can put on the table fast, but we also want it to be just a little bit on the healthy side life. Mine and Angela’s Chicken Flatbread “Pizza” is just what you need! We were both scrounging around the kitchen last week in trying to find something for lunch. She wanted chicken fingers (We buy the organic variety) and I wanted chicken fingers (a kid at heart), but we didn’t really have anything to go along with it to make it a substantial meal…AND we just didn’t want something boring to eat. So, we went through the freezer and fridge to see what we had.

I had forgotten that we had bought a package of Uttapam. Uttapam is a gluten-free rice flour pancake, and it has a strong Indonesian background. Our Uttapam had hints of diced sautéed onions and cilantro on it. Side bar: I love cilantro! We introduced Angela to Uttapam a few months back, and she fell in love with them. Yes…she loves food period, but we’re trying to give the girl a food experience while trying to make her mouth happy.

After finding the Uttapam, we realized we had some shredded organic cheese. DING DING DING! A lightbulb came on and knew what we wanted. We just found ourselves lunch! We quickly assembled our flatbread pizzas. Quickly because we were so hungry. I really thought she was going to start gnawing on my leg!

In putting everything together, there’s a couple of things to note: 1. We didn’t use any sauce on it. The Uttapam is nice and succulent, so you don’t need a sauce. 2. We cooked everything in a toaster oven. We called it a flatbread pizza because it wasn’t really an open faced sandwich.

Chicken Flatbread
Prep Time 10 minutes
Cook Time 8 minutes
Total Time 18 minutes

Ingredients

  • 6 Organic cooked chicken fingers
  • 1 Box of Uttapam (normally 4 to a box)
  • 1 1/2 Cups of organic shredded cheese

Instructions

  • Pre-heat toaster oven to 400 (or conventional oven to 375).
  • Diced chicken fingers scatter upon Uttapam.
  • Finish with shredded cheddar cheese.
  • To boost up the flavor, you can use a little paprika, sea salt, and some cracked pepper.
  • Bake for approximately 8 to 10 minutes.
  • Allow 2 minutes to cool and settle, and then you're done!
